Nutella Energy Bites

When my children come home from school they are hungry!  Today I wanted to make them a different type of after school snack.  These No Bake Nutella Energy Bites were a treat.  Yummy Nutella is mixed with old fashioned oats, coconut, ground flax seed, honey and chocolate chips for a snack that could also double as dessert!   These are so simple to make and your family will thank you!

This recipe makes about 20-30 Energy Bites depending on how big or small you like them.  You can also store these in several smaller containers in the refrigerator for when you want to grab a snack and go.  I have even made these bites ahead of time and frozen them for later, which makes them even more convenient.  You can freeze them in individual bags or freezer friendly containers that can easily be tossed into your child’s lunch bag on busy mornings.  Enjoy!

Nutella Energy Bites

Ingredients

  • 1 1/2 cups old fashioned oats
  • 1/2 cup lightly toasted coconut
  • 1/2 cup Nutella
  • 1/4 -1/3 cup ground flaxseed
  • 1/2 cup milk chocolate chips
  • 1/3 cup honey
  • 1 1/2 tsp. vanilla extract

Instructions

  1. Combine all ingredients and mix well. (I like to mix this in my Kitchen Aid Mixer)
  2. Roll into balls.
  3. Serve or store in several individual small airtight containers in the refrigerator for up to 1 week.
