Cranberry Almond Baked Oatmeal

The weather has been so cold and so blustery here lately that I have been making anything and everything that makes me feel warm and cozy.  For lunch and dinner, it’s mostly been soup.  For breakfast, it’s been warm baked oatmeal!  My whole family loves oatmeal and it’s fun to come up with different flavor combinations with fresh, seasonal ingredients throughout the year.  I still had a few bags of fresh cranberries in my refrigerator, and with Christmas right around the corner, I thought that baked oatmeal with cranberries would not only be festive, but would be pretty darn tasty too.  Along with the slightly tart, lightly sweetened cranberries, I added sliced almonds for a nice crunch and a splash of almond oil because it tastes and smells so wonderful and I absolutely love it:)  This Cranberry Almond Baked Oatmeal can also be made ahead of time.  This would be easy to prepare on Christmas Eve and then just pop it into the oven when you wake up on Christmas morning to bake.  To make it a little more special, you could even sprinkle a few white chocolate chips on top of the warm oatmeal!  Yum!  This oatmeal isn’t just for special occasions though.  Start your morning with this satisfying and delicious breakfast anytime that cranberries are in season!

Fresh Cranberry Almond Baked Oatmeal

Ingredients

  • 3 cups old fashioned oats
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 cup 2 % milk
  • 2 eggs
  • 1/4 cup unsalted butter, melted and cooled
  • 1 tsp. cinnamon
  • 2 tsp.baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1/2 cup sliced almonds or slivered almonds
  • 1 cup fresh cranberries, roughly chopped (or 1 cup dried cranberries)
  • 1 tsp. to 1 Tbsp. sugar (depending on how sweet or tart you like -to sprinkle on the chopped fresh cranberries)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine all ingredients in a large mixing bowl except for the cranberries.
  3. Mix well.
  4. Chop your cranberries (I like to use my food processor) and sprinkle 1 tsp. of sugar on the chopped cranberries.
  5. Mix in the fresh cranberries.
  6. Pour prepared oatmeal into a 8 x 8 baking dish or pie plate.
  7. Bake for 30-40 minutes or until the center looks set.
  8. Serve warm.
  9. Serves 4-6.
  10. * To freeze, simply combine and mix all ingredients as listed in the instructions, store in an air tight, covered oven and freezer friendly container, and freeze unbaked. To defrost, place in the refrigerator overnight and bake as usual in the morning.

    Thanks for your recipe. I subbed coconut sugar for both the sugars, used ghee and whole goat milk instead of the butter and 2%. It turned out super tasty and I’ll definitely be making this again very soon!

    I am looking forward to trying this. I have been making a baked oatmeal in my crock pot and really like that but it doesn’t have the cranberries in it.
