Apple Layered Crumb Cake

I just love a good coffee cake.  The cake doesn’t have to be fancy, but just a little something sweet with my coffee in the morning starts my day off on a good note.  If the weather is cool, rainy or snowy, then even better yet.  Who wouldn’t want to cozy up with a hot cup of coffee and a homemade cake on a gloomy day?  This tasty Apple Layered Crumb Cake is simple to make and perfect for the weekends when you have extra time to enjoy your loved one’s company.  It’s great for a holiday breakfast or even a brunch.  A buttery crumb topping  is sprinkled over this moist spiced cake with a delicate apple layer that makes for a beautiful and delicious breakfast treat.  Share this tasty cake with someone special this weekend!

Apple Layered Crumb Cake

Ingredients

  • 1 3/4 cups all purpose flour
  • 3/4 cup brown sugar, packed
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup unsalted butter, softened and divided (remainder is saved for the crumb topping)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cloves
  • 1 tsp. vanilla
  • 2 eggs
  • 1/3 cup buttermilk
  • 1 large baking apples, peeled and sliced very thin
  • For the Crumb Topping:
  • Remaining 2 1/2 Tbsp. unsalted butter,softened
  • 1/3 cup all purpose flour
  • 1/3 cup brown sugar
  • 1/4 tsp. cinnamon

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare a 9 inch cake pan or baking dish by buttering, flouring and lining it with parchment paper.
  3. Set aside.
  4. In your Kitchen Aid Mixer, cream 1/3 cup of the butter and the 3/4 cup brown sugar together.
  5. Add the eggs and vanilla and mix until completely blended together.
  6. Add the flour, baking powder, salt, cinnamon, nutmeg and cloves.
  7. Mix until incorporated.
  8. Slowly add the buttermilk and stir until it becomes a nice batter.
  9. Spread half of the batter into your baking dish evenly.
  10. Layer the apples on top.
  11. Carefully cover the apples with the remaining batter, trying not to upset the apple layer and smooth it out. *This took a little time...but well worth it:)
  12. With a fork, pastry blender or your mixer, combine the ingredients for the Crumb Topping until it becomes small ball like crumbles.
  13. Sprinkle on top of the cake and gently press down with your hand or the back of a spoon.
  14. Bake for 30-35 minutes or until a tooth pick inserted into the cake comes out clean.
  15. Cool for 15-20 minutes and then remove to a cooling rack to completely cool. It can be a little tricky to remove this from the pan, but you can also make this in a pretty pie dish and then just serve it out of that.
  16. Serves 8.
