Cranberry & White Chocolate Oat Cookies

I hope everyone is staying warm this weekend!  I can’t believe that we are completely covered in snow already.  Even though I was prepared, the change in weather is still an adjustment.  I really have a hard time keeping my baking more “Fall like” until Thanksgiving when it’s so pretty and snowy out!  I did happen to click over to the Christmas station on Pandora the other day, but quickly turned it back.  I guess a part of me still feels like it’s too early.  As far as my baking goes, cranberries seem to be a safe, in between seasons ingredient that I have been using a lot of this week. These chewy Cranberry & White Chocolate Oat Cookies were a last minute dessert that I made for my family as a treat yesterday, and they just loved them!

Cranberry & White Chocolate Oat Cookie Dough

These yummy cookies are really easy to make and your kiddos might even want to help you.  These cookies are sort of an everyday, snack type cookie that’s perfect for when you hear, “Mom, can I have a snack?” or “Mom, is there dessert tonight?”  They are slightly crisp on the outside, chewy on the inside and the cranberries and white chocolate are delicious together in this dessert.  The cookie dough is made up of a blend all purpose and wheat flours along with old fashioned oats, brown sugar, a little milk and of course dried cranberries that plump up nice when baked and some white chocolate chips.  I usually just take big Tablespoon scoops, kind of form them a bit into a round shape (I do not roll them into a ball) and just drop them onto the parchment paper.  If I want to make them a little different, sometimes I flatten them a bit with my fingers to make more of a standard shaped cookie.

After the cookies are out of the oven, you can serve them warm, or let them cool and then drizzle them with a little melted white chocolate.  Of course this is what my children love me to do! 🙂  The drizzle is easily made by warming white chocolate chips in a small sauce pan with a splash of milk and then with a whisk, drizzling it across the cooled cookies.  My kiddos couldn’t wait until the white chocolate hardened back up to try one yesterday, but that’s okay, I didn’t mind.  I love seeing their hands reaching for something I just made. 🙂

Easy Cranberry & White Chocolate Oat Cookies

Cranberry & White Chocolate Oat Cookies

Ingredients

  • For the Cookies:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup shortening
  • 1 3/4 cups brown sugar, packed
  • 1 egg
  • 2/3 cup milk
  • 1 tsp. vanilla extract
  • 2 cups old fashioned oats
  • 3 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1 (5 oz) bag dried cranberries
  • 1 cup white chocolate chips
  • For The Drizzle:
  • 1/2 cup white chocolate chips
  • splash of milk

Instructions

  1. Preheat your oven to 375 degrees.
  2. Line 2 baking sheets with parchment paper and set aside.
  3. In your Kitchen Aid Mixer, cream the butter, shortening and brown sugar until light and fluffy.
  4. Add the egg, milk and vanilla and mix well.
  5. Add the oats, and flours along with the soda, salt, cinnamon and nutmeg and mix until combined.
  6. Add the dried cranberries and white chocolate chips and mix until incorporated.
  7. Drop Tablespoonfuls of the cookie batter onto the lined baking sheets, flatten with your finger tips if desired for a flatter cookie and bake for 10-12 minutes or until the cookies become light golden around the edges.
  8. Remove from the oven and let them rest 1 minute before removing to a cooling rack.
  9. Serve warm or room temperature with milk.
  10. If you are going to add the drizzle, combine the white chocolate chips with a splash of milk in a small sauce pan over very low heat and with a small whisk, continue stirring until the chocolate is melted and you get a nice consistency.
  11. Drizzle the white chocolate on top of the cookies and let it harden.
  12. Makes about 4 dozen cookies.
  13. *To freeze: Let the cookies cool completely and them store in a plastic freezer safe bag or container.
