Whole Wheat Strawberry Oat Muffins

Good Morning!  I hope everyone had a chance to get outside and enjoy some wonderful Spring weather this weekend.  Today my children are headed back to school after being off for a week and I am trying to get back into my normal routine.  This morning I wanted to fill those little tummies with something healthy, so I baked these yummy, filling Strawberry Muffins.  These moist muffins are packed with whole wheat, oatmeal and fresh sweet strawberries.  They can also be a great after school snack paired with a nice cold glass of milk.  If you have any muffins left over, these also freeze very nicely.  Does your family have a favorite strawberry recipe?

Whole Wheat Strawberry Oat Muffins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups old fashioned oats
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 4 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1/4 cup unsalted butter, melted and cooled
  • 1/4 cup canola oil
  • 2 eggs, lightly beaten
  • 1 cup milk
  • 1 tsp. vanilla extract
  • 2 cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line muffin tins with paper liners and set aside.
  3. In a Kitchen Aid mixer, combine the flour, oats, sugars, baking powder, cinnamon and salt.
  4. Mix together.
  5. Add the butter, oil, eggs, milk and vanilla.
  6. Stir together until moistened.
  7. Gently fold in the strawberries.
  8. Fill muffin liners 2/3 full and bake for 18-20 minutes or until toothpick inserted into muffin comes out clean.
  9. Let cool 10 minutes and remove them from the muffin pan and cool on a rack.
  10. Makes 18-22 muffins.
