White Chocolate Cherry Almond Bites

With summer break just around the corner, I want to make sure that I have a bunch of filling, homemade snack ideas ready for those long summer days.  My children (and my husband) really enjoyed the Nutella Energy Bites that I made a few months ago, so I decided to try a different version of this delicious no bake snack.  I love almond and cherry flavors together so it only made sense that I blend the two, but with some white chocolate of course!  This recipe also includes some great, healthy ingredients.  They are packed with almond butter, almonds, flax seed and dried cherries.  No bake recipes are great for those little hands that like to help you in the kitchen too.  Stay tuned, as I will be posting yet another nutritious, fun, no bake snack for the kiddos next week!  What are your family’s favorite homemade snacks for summer?

White Chocolate Cherry Almond Bites

Ingredients

  • 1 1/2 cups old fashioned oats
  • 1/4 cup almonds, chopped fine
  • 1/4 cup dried cherries, chopped fine
  • 3/4 cup almond butter
  • 1/2 cup ground flax seed
  • 1/2 cup white chocolate chips
  • 1/3 cup honey
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract

Instructions

  1. Mix all ingredients in a Kitchen Aid Mixer until well blended.
  2. Shape into balls.
  3. Store in an airtight container in the refrigerator for up to 1 week.
  4. Makes about 20 (golf ball sized) bites.
