Warm Blueberry Crisp

June 20, 2013 by Shannon

This time of year the fruit stands around here are full of fresh berries.  If you don’t have your own orchard in your backyard, many of these places also allow you to pick your own fruit.  My children and I really look forward to that every year.  It’s one of our favorite things to do in the summer.   There is nothing better than making a delicious dessert with the fruit you just harvested.  I made this yummy Warm Blueberry Crisp in 8 oz. canning jars because I love how the dessert looks in them and hey, it’s great portion control, right?  If you are having a family get together or picnic, the recipe can be doubled, and can even be made ahead of time.  Everyone will love their own individual servings of this special homemade dessert.  The sweetened, warm blueberries topped with this buttery, slightly crisp topping are the perfect summer treat.  Make it extra special with homemade whipped cream or ice cream!

Ingredients

  • 4 cups fresh blueberries
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon
  • 1 Tbsp. flour
  • For the topping:
  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 cup cold, unsalted butter, cut into cubes
  • pinch of salt
  • 1 tsp. lemon zest

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a medium sized bowl, gently combine the berries, 1/4 cup sugar, cinnamon and the 1 Tbsp.flour.
  3. Set aside.
  4. In your Kitchen Aid Mixer, or with a pastry blender, combine the cold butter, flour, sugar, salt and lemon zest until it looks like coarse meal.
  5. Divide the blueberry mixture evenly into (8) 8 oz. wide mouth canning jars and set them on a large cookie sheet.
  6. Top evenly with the crisp topping.
  7. Bake for 25 to 30 minutes or until bubbly.
  8. Let cool 10 minutes.
  9. *If made ahead of time and you will like to serve these warm, you can heat them up in a warm oven just before serving.(They taste great warm or room temperature:)
  10. Makes (8) 8 oz. servings.

Totally agree, fruit this time of year is absolutely incredible. I love perusing the local farmers markets for anything and everything. We also have this really awesome organic fruit farm called Ways which sells just stunning produce every year. Thanks for sharing, this recipe looks sooooo good. Perfect for the start of summer!

I love going to the orchards to get fresh fruit. I love this recipe with the blueberries in the canning jars…I have tons in my cupboard. (Seems to be the only drinking glass that don’t break!)
