Warm Baked Oatmeal

This oatmeal is a nice treat on a cold morning and make your whole house smell delightful.   It tastes like a warm oatmeal cookie.  Top with your favorite nuts and dried berries.  My family loves this with oatmeal with a little warm milk poured over the top.  This recipes freezes very well too.  If you are going to freeze this, mix all ingredients and put in a freezer friendly container wrapped tightly with foil if you do not have a cover.  Thaw overnight in the refrigerator and then bake as usual in the oven in the morning.

Warm Baked Oatmeal

Ingredients

  • 3 cups Rolled Oats (quick or old fashioned)
  • 3/4 cup brown sugar
  • 1 cup milk
  • 2 eggs
  • 1/4 cup butter, melted and cooled
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 tsp. pure vanilla extract
  • 1 tsp. salt

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt.
  3. Beat in milk, eggs, melted butter, and vanilla extract. Spread into a 8x8 inch baking dish.
  4. Bake in preheated oven for 30-40 minutes.
