Very Berry Oat & Bran Muffins

Since it seems like Winter will be sticking around a little longer, I needed something to brighten up my week.  I was in the produce section at the grocery store, and I decided to really stock up.  I usually buy a good amount of fruit because we have a large family and we eat plenty of apples, bananas, pears and other fruits along with our meals and for snacks.  Fresh fruit makes me feel better when the weather is cold and dreary, so I filled my shopping cart with even more fruit than usual.  If it looked fresh, I bought it!   A cashier at the store asked me once if I made fruit baskets.  After I realized what she meant, I laughed and simply explained that my family just really loves fruit!

Unfortunately, the berries in the produce section sometimes aren’t that impressive.  They can be mushy in the container or they just don’t look good.  I am fortunate to live in a place where we can go pick fresh berries or run down to the nearest fruit and vegetable stand for same day,  freshly picked produce in the summer.  Well, it’s definitely not summer, so I wasn’t going to be doing any of that, but the strawberries and blueberries this week at the grocery store looked very promising!  I was actually excited ( it doesn’t take much 🙂 ) and couldn’t wait to get home and bake something with the berries.  I decided to make muffins because they always go over well at our house, and they are such a filling, “on the go” breakfast or snack for our busy family.

These Very Berry Oat & Bran Muffins provide you with your daily dose of fiber from Bran Flakes and old fashioned oats, and are bursting with flavor from bits of fresh strawberries and blueberries in a cinnamon and buttermilk batter.  These muffins are easy to make and a little sprinkle of old fashioned oats on top of each muffin just before baking gives them an extra special touch.  If you are in need of a pick me up during these last few weeks of Winter, close your eyes, dream of Spring and start your morning with one of these fresh and tasty muffins!

Very Berry Oat & Bran Muffins

Ingredients

  • 3 cups Bran Flakes
  • 1 cup old fashioned oats + 1/3 cup divided
  • 2 1/4 cups buttermilk
  • 1/2 cup canola oil
  • 1/2 cup unsweetened applesauce (you can use any applesauce if you are in a pinch)
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup brown sugar
  • 1 1/2 cups whole wheat flour
  • 1 cup all purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 cup of fresh blueberries
  • 1 cup of finely chopped fresh strawberries

Instructions

  1. In your Kitchen Aid Mixer, combine the bran flakes, 1 cup of the oats and the buttermilk, stir and let sit for 15 minutes.
  2. Meanwhile, preheat your oven to 375 degrees.
  3. Line your muffin tins with paper liners.
  4. Rinse and chop your fruit.
  5. After the 15 minutes, add the oil, applesauce, eggs and vanilla to the mix.
  6. Combine well.
  7. Add the sugar, mix well.
  8. Sift the dry ingredients and add them to the batter and mix until combined.
  9. Gently stir in the blueberries and strawberries by hand, being careful not to squish the blueberries.
  10. Pour muffin batter into lined muffin tins about 3/4 full (I like to use an ice cream scoop).
  11. Sprinkle the remaining 1/3 cup of oats on top of the muffins.
  12. Bake for 16-18 minutes or until a toothpick inserted into the muffins comes out clean.
  13. Remove from oven and let cool.
  14. I think these are best eaten while they are still a tad bit warm, but they are still delicious at room temperature.
  15. Makes about 22 muffins.
  16. * If freezing, let muffins cool completely and then store in a freezer friendly container or plastic bag.

    These muffins look delicious! Being a novice at baking, I wonder if you could tell me what type or what kind of bran flakes you use? Would that be like a brand of cereal like ALL BRAN or another kind? or just some oat or wheat bran you buy in the bulk food section of the grocery store? Thanks!

      Hi Janet! We just love these muffins:) Yes that’s correct- plain Bran Flakes like All Bran Cereal is just what you need. Let me know how they turn out. I hope you like them as much as we do!
