Triple Berry & Banana Almond Baked Oatmeal for Breakfast

Mother Nature sure likes playing tricks on us! Last week I was prepping my garden beds and walking the dog with a light sweatshirt on and this week we are back to winter coats and a landscape of white. Oh well. At least the days are getting longer and this uncertain weather will have to end sooner or later. I love sending my kiddos off to school with a warm breakfast in their tummies, especially on mornings like today when the temperatures are hovering around 20 degrees. Spring is definitely on my mind though, so I brightened up breakfast today with this Triple Berry & Banana Almond Baked Oatmeal! Boy, is this delicious!

If you’ve ever followed along and participated in any of the weeks from my Stock Your Freezer Fridays Series, you know that I love making Baked Oatmeal. It’s quick, healthy and very easy to make ahead of time.

Easy Triple Berry & Banana Baked Oatmeal Ingredients

Because baked oatmeal recipes are so versatile, you can add the things your family loves without sacrificing the recipe’s taste.

I keep a triple berry mix on hand in my freezer for smoothies, but you can use fresh berries for this recipe if you have them in your refrigerator.

Making Triple Berry & Banana Almond Baked Oatmeal for Breakfast

I get out my big mixing bowl and simply mix everything together well. Easy peasy!

You can pour this into a glass baking dish, a pie plate or in my case today, I wanted to use my pretty ruffled edge casserole dish.

Mix Ingredients for Triple Berry & Banana Almond Baked Oatmeal

Bake this in your oven for 35-40 minutes and you’ve got a yummy breakfast ready for your whole family!

Tip: Don’t have 40 minutes to bake this in the morning? No problem! Bake this the day or night before, store in the refrigerator and scoop it into individual bowls and warm it up in your microwave! Easy, convenient & yummy! 🙂

Warm Triple Berry & Banana Almond Baked Oatmeal

Freezer Friendly Breakfast- Triple Berry & Banana Almond Baked Oatmeal

Triple Berry & Banana Almond Baked Oatmeal

Ingredients

  • 3 cups old fashioned oats
  • 1/2 cup brown sugar
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 2 ripe bananas, mashed
  • 2 eggs, lightly beaten
  • 1/4 cup unsalted butter, melted then cooled
  • 1 tsp. vanilla
  • 1 1/4 cup slivered almonds, divided
  • 1 cup frozen or fresh mixed berries (blackberries, raspberries & blueberries)
  • 1 cup milk (you may also use almond milk)

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a large mixing bowl, combine all of the ingredients, except for 1/4 cup of the slivered almonds.
  3. Pour the oatmeal mixture into a 8 x 8 baking dish or pie plate.
  4. Top with remaining almonds.
  5. Bake for 35-40 minutes or until almost set.
  6. Serve warm with milk on top if desired.
  7. Serves 6.
  8. *To freeze: Prepare as usual, but do not bake. Cover and store in the freezer until ready to use. Let thaw overnight, then bake as usual in the morning, uncovered.
