<p>I hope everyone had a wonderful 4th of July!  My family and I made our way to a local parade in the morning, ate by the lake for lunch, and enjoyed some tasty burgers for dinner before watching some great fireworks in the evening.  The weather was actually a bit cooler than usual, which seemed to make for a less &#8220;buggy&#8221; night.  How did you spend your day?</p>

<p>On Saturday afternoons, I usually make breakfast ahead of time for Sunday mornings.  This allows me to spend a little extra time sipping my coffee and catching up with everyone on Sunday morning instead of spending a lot of time in the kitchen.  After popping breakfast into the oven, my work is done and we all get to take our time enjoying a tasty, weekend breakfast together.</p>

<p>I have had a bowl full of juicy peaches on my counter all week that I just haven&#8217;t gotten around to using.  Since the weather is a little cooler, I thought some sort of baked oatmeal would be the perfect dish for this Sunday&#8217;s breakfast!  This warm Blackberry &amp; Peach Cobbler Baked Oatmeal is just bursting with fresh flavor and almost tastes like dessert!  The juicy peaches and plump fresh blackberries are baked with cinnamon, brown sugar and old fashioned oats to give you a simple, but yummy breakfast that everyone in your family will love.  This oatmeal will fill your whole house with the sweet aroma of fresh summer fruits and have everyone anxiously awaiting breakfast.</p>

<p>I doubled this recipe because I wanted to have some for tomorrow, and I knew my children were going to want to eat this for lunch today when it came out of the oven.  This oatmeal is beautiful on the table for breakfast or brunch and can even be made ahead of time and stored in the freezer!  I have one small bowl of this left over and I think I might even top it with a little vanilla ice cream for dessert tonight:)</p>

<p>Have you been enjoying any yummy Girl Scout Cookies lately?  I know I have!  Every year I buy a variety of cookies and they never seem to last very long at our house.  I sometimes put them in the freezer so I won&#8217;t be tempted to grab one or two while I am in the kitchen, but sometimes they taste really good chilled and frozen, so that doesn&#8217;t really help me out at all.  My favorite Girl Scout cookie is hands down, Samoas!  I think I could eat half of the box myself.  I am a little embarrassed to say that, but hey&#8230;it&#8217;s the truth.  Actually, I am waiting for my Samoas to arrive, because I ordered late so to satisfy my craving for them, I baked a dish of some warm, Samoa inspired oatmeal!</p>
<p>This warm Samoa Baked Oatmeal is loaded with coconut, chocolate and of course caramel.  While it doesn&#8217;t exactly taste like the actual Samoa cookie, it really has a great flavor, and let&#8217;s remember that this is still oatmeal folks <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" />  It&#8217;s flavor kind of reminds me of those fabulous magic cookie bars and really could even be served as a dessert with maybe some vanilla ice cream on top?!  This recipe takes only minutes to prepare and can even be made ahead of time.  If you or someone you love really enjoys Samoas, bake a pan of this tasty oatmeal for them sometime soon!</p>

<p>The weather has been so cold and so blustery here lately that I have been making anything and everything that makes me feel warm and cozy.  For lunch and dinner, it&#8217;s mostly been soup.  For breakfast, it&#8217;s been warm baked oatmeal!  My whole family loves oatmeal and it&#8217;s fun to come up with different flavor combinations with fresh, seasonal ingredients throughout the year.  I still had a few bags of fresh cranberries in my refrigerator, and with Christmas right around the corner, I thought that baked oatmeal with cranberries would not only be festive, but would be pretty darn tasty too.  Along with the slightly tart, lightly sweetened cranberries, I added sliced almonds for a nice crunch and a splash of almond oil because it tastes and smells so wonderful and I absolutely love it:)  This Cranberry Almond Baked Oatmeal can also be made ahead of time.  This would be easy to prepare on Christmas Eve and then just pop it into the oven when you wake up on Christmas morning to bake.  To make it a little more special, you could even sprinkle a few white chocolate chips on top of the warm oatmeal!  Yum!  This oatmeal isn&#8217;t just for special occasions though.  Start your morning with this satisfying and delicious breakfast anytime that cranberries are in season!</p>

<p>Good Morning!  What kind of weather are you waking up to today?  My family woke up to a cold but beautiful snow covered landscape!  It was the first snowfall of the season, but it looks like it is going to melt over the next few days and return to average fall temperatures for at least the rest of the week.  On this chilly morning, a warm breakfast was definitely in order to get everyone moving and out the door.  We love carrot cake and oatmeal at our house, so it was only a matter of time before I decided to combine the two:)  I just love coming up with new, fun ways to make oatmeal.  My children really like to guess what the next flavor is going to be too!  This Carrot Cake Baked Oatmeal is a warm, hearty breakfast that even allows you to sneak in some veggies first thing in the morning.  Old fashioned oats are blended with freshly grated carrots, raisins, walnuts and spices for an amazing breakfast treat.  I like to serve our oatmeal warm from the oven with a splash of milk.  This oatmeal can be made ahead of time and placed in the refrigerator overnight until you are ready to bake it in the morning.  Better yet, this oatmeal is freezer friendly, so make a double batch and store some in the freezer for the busy upcoming holiday season!  If you like the flavor of carrot cake, you will love starting your day with this delicious oatmeal!</p>

<p>I love serving my family a warm breakfast on a cold morning.  The last few mornings have been quite chilly here and I was in need of something other than a cold bowl of cereal to get my little ones up and out of bed.   I love apples and since it&#8217;s apple season, I have been cooking and baking with apples on a daily basis.  Many of the apples my family and I picked at the apple farm earlier this fall have gone into wonderful, comforting desserts like Apple Pie and <a title="Old Fashioned Apple Crisp" href="https://www.cozycountryliving.com/old-fashioned-apple-crisp/">Old Fashioned Apple Crisp</a>.  Ending a cool evening with a warm apple dessert is great, but sometimes I like to start my day with apples too!</p>

<p>The mornings have been really quite chilly here in Western New York this week, complete with a Freeze Advisory from the National Weather Service.  I actually don&#8217;t mind the cold mornings as long as I have a cozy flannel shirt, a hot cup of coffee and a warm breakfast.  I have many different versions of Baked Oatmeal that I like to make my family, but this Trail Mix Baked Oatmeal is pretty addicting!  I don&#8217;t know if it&#8217;s all of the different flavors and textures from the crunchy nuts, baked chopped apple, or the sweet hint of cranberry, raisins or semi sweet chocolate that has me making double batches of this.  As a mother, it always makes me feel good to send my children off to school knowing that they had a warm, healthy, filling breakfast.  My family prefers this for breakfast over cold cereal any day!   This oatmeal is also freezer friendly, so if you mix up a double batch you can have one for now and one waiting for you in the freezer for another day.</p>

Cover well and freeze. <p>The blueberries are ripe on the bushes in our neck of the woods and we have really been enjoying them at our house.  There are plenty of yummy dessert recipes I like to make with blueberries, but I also like to incorporate these juicy berries into our breakfast meals.  Since our family really enjoys oatmeal in the morning, I thought some blueberries and almonds would be a scrumptious, filling meal to start the day.  My children have swim lessons twice a week in the summer and this Blueberry Almond Baked Oatmeal packed with fresh fruit and nuts make for a really well balanced meal that keeps them full until lunchtime.  If you are looking for a new recipe to try with those fresh picked blueberries, give this family friendly breakfast a try.  You can also double this recipe and freeze it for an upcoming busy week or for the upcoming crazy back to school season.  It would be really nice to enjoy those fresh berries for breakfast into the beginning of fall.  What fresh, fruity breakfasts have you been cooking up lately?</p>
