Sweet Strawberry Crisp

I am having a bit of a love affair with strawberries right now.  That’s right, I can’t get enough!   I have mentioned in previous posts that my family just loves strawberries.   This week I have been cooking and baking with strawberries almost every day.  This recipe however, is my very favorite.   I once read somewhere that you eat with all of your senses.  From the moment you smell the food you are mentally visualizing  it and are craving it.  When you see the food, you are  imagining the first bite along with all of the wonderful flavors it might have and how satisfying it will be.  The moment I took this sweet, bubbling dessert out of the oven I knew it would be delicious.  My whole house smelled like vanilla and sweet strawberries.  After taking a few pictures I grabbed a spoon and took a taste of  this pretty confection.  The buttery, lightly crisped oats over the warm, baked strawberries seemed to melt in my mouth.  It was amazing!  This dessert was the perfect ending to a long day and had everyone in my family asking for more.  What is your family’s  favorite strawberry recipe?

Sweet Strawberry Crisp

Ingredients

  • 2 lbs. fresh strawberries, hulled and sliced in half
  • 2 tsp. vanilla extract
  • 1/4 cup flour
  • 1/2 cup sugar
  • 1 cup old fashioned oats
  • 3/4 cup flour
  • 8 Tbsp. butter, cold and cut into cubes
  • 2 Tbsp. white sugar
  • 1/4 cup brown sugar
  • 1/4 tsp. salt

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a taller 2 quart baking dish, combine the strawberries, vanilla, 1/4 cup flour and 1/2 cup sugar and stir gently.
  3. In your Kitchen Aid Mixer or with a pastry blender, combine the 3/4 cup flour, butter,brown sugar and salt.
  4. Mix until it looks like coarse meal.
  5. Add the oatmeal and squeeze it into the other mixture to make large clumps.
  6. When well combined, drop the clumps over the berries and break it up a bit as you drop it.
  7. Cover evenly.
  8. Bake for 35-45 minutes or until the top is golden brown and the berries are bubbly.
  9. Let cool 10 minutes and serve warm!
