Stock Your Freezer Fridays {Week # 1}

This week is the first week of the Stock Your Freezer Fridays series here at Cozy Country Living.  I’m so happy you are here!   This is a 6 week long series that will focus on stocking our freezers with meals and snacks before the busy holiday season arrives.  Sometimes November and December can go by so fast and then you are left wondering where the time went.  I know in my house, if I have meals prepared and planned in advance, I can take more of my time to focus on the true meaning of the Christmas season and I end up enjoying my family more when I am not frazzled.

Each week during this series, I will have recipes and a shopping list available so you can follow along, prepare your food on Fridays or over the weekend and stock your freezers at home as well.  I will try to keep things simple (for example, baking breakfasts one week, preparing dinners another week, etc.) so we aren’t running all over our kitchens like crazy people:)  Now I have a large household, so I am stocking my freezer for 6 people.  If you have a smaller family, adjust the quantities to best suit your needs.  I hope that you find this series helpful and I would love for you to share any tips or ideas that may help myself and others with their freezer cooking!

 

Recipes for Week #1 Stock Your Freezer Fridays are:

(2 dozen) Pumpkin Chocolate Chip Muffins

(2 loaves) English Muffin Bread

(2 batches) Banana Bread Baked Oatmeal

Stock Your Freezer Fridays {Week # 1} Shopping List

Ingredients

  • 7 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 6 cups old fashioned oats
  • 1 1/2 cups sugar + 1 1/2 Tbsp.
  • 1 1/2 cups brown sugar
  • 3/4 cup canola oil
  • 1/2 cup unsalted butter
  • 8 eggs
  • 3/4 cup applesauce
  • 2 cups milk
  • 4 large bananas
  • 1 cup chopped walnuts
  • 1 (12 oz.) package semi sweet chocolate chips
  • 1 (15 oz.) can 100% pure pumpkin
  • 2 1/2 cups warm water
  • 3 1/2 tsp. fast acting yeast
  • cinnamon
  • baking powder
  • baking soda
  • vanilla extract
  • salt
  • 4 gallon sized plastic freezer bags
  • 2 freezer friendly 8 x 8 baking dishes, pie plates or aluminum baking containers with lids or plastic wrap and foil to cover
