Stock Your Freezer Fridays Series Week 1

Stock Your Freezer Friday's Series at Cozy Country Living

Hello there!  Welcome to the first week of this year’s Stock Your Freezer Friday’s at Cozy Country Living!  I’m so happy you are here and are up to this 6 Week Freezer Cooking Challenge!  It’s going to be so nice to have these meals ready to go when things get busy this holiday season! If you are new to our Freezer Fridays and how it works, please start HERE.  Are you ready?!

 Here’s what we are working on this week!

Cozy Country Living Freezer Fridays Week 1

(1) Breakfast Burritos 

Prepare, cool completely, then wrap in a paper towel and store in tortilla bag or plastic freezer bag.  Warm up in the microwave in the paper towel on a plate for 1 -1 1/2 minutes.

(1) Pumpkin Chocolate Chip Muffins 

Prepare, cool completely and store in a freezer friendly container or plastic bag.  Let defrost on the counter overnight or remove one at a time and warm in the microwave for 20 -30 seconds.

(x 2) Baked Tortellini Casserole 

After prepared, place in freezer friendly casserole dish with lid, but do not bake! Store covered.  When ready to bake, defrost overnight in the refrigerator, or extend the bake time a bit if baking right from frozen.

(1) Loaded Vegetable Soup 

Prepare and cool completely.  Store in gallon sized freezer bags and lay flat in the freezer.  You may also store in a freezer safe container if you have the space.  To use, thaw in the refrigerator overnight laying in a casserole dish (just in case for some reason it leaks because the bag has gotten scratched in the freezer), or place the bag in a pot (not heated) a few hours before you are going to be transferring it to the pot to warm it up.

Stock Your Freezer Fridays Series Week #1 Ingredient List

Ingredients

  • 4 onions
  • 4 large carrots
  • 1/2 bunch celery
  • 1 1/2 large green peppers
  • 1 large red pepper
  • 1 small head of broccoli
  • 4 large vine ripened tomatoes
  • 3 potatoes
  • 1 cup fresh mushrooms
  • 8 large cloves garlic
  • 22 eggs
  • 1/4 cup butter
  • 1/4 cup milk
  • 10 cups water
  • 2 lbs. of lean ground beef 97/3
  • 1/2 lb. sausage, browned and fat drained, or cooked bacon, copped ham, etc.
  • 1/2 (26 oz.) bag frozen hash browns-shredded potatoes
  • 2 (24 oz) packages of fresh cheese tortellini
  • 2 cups Sharp Cheddar Cheese
  • 6 cups of freshly grated mozzarella cheese
  • 2 (28 oz) cans of crushed tomatoes, or whole peeled tomatoes crushed by hand
  • 2 (8 oz) cans of tomato sauce or spaghetti sauce
  • 1 (15 oz.) can Muir Glen Organic Fire Roasted Petite Diced Tomatoes
  • 3 Tbsp. tomato paste
  • 1 (15 oz.) can of corn
  • 1 1/2 cups fresh or frozen peas
  • 1 1/2 cups fresh or frozen fine green beans
  • 1 (15 oz) can pure pumpkin
  • 20 flour tortillas
  • 1 1/2 cups sugar
  • 3/4 cup canola oil
  • 3/4 cup applesauce
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 12 oz. package semi sweet chocolate chips
  • olive oil
  • 3 large bay leaves
  • 1/4 cup dried basil
  • 1/4 tsp. crushed red pepper flakes (optional)
  • salt
  • sea salt
  • black pepper
  • plastic gallon sized freezer bags
  • (2) Freezer Friendly 9 x 13 casserole dishes with lids

    Looks like a great series. I do a lot of freezer cooking, but usually just double whatever recipe I am cooking each day, and freeze the extra for a later date. I wish I could devote more time to it, but that’s what works best for me right now. Thank you for joining us at Friday Frenzy.
