Spanish Rice with Beef

This Spanish Rice with Beef  is a great recipe that is simple and filling.  On a day when you are running short on time and energy, this meal can be prepared and on the table in about a half an hour.  Serve with a fresh salad and bread and you’ve got yourself a well balanced week night dinner!  This also tastes great topped with freshly grated sharp cheddar cheese.

Spanish Rice with Beef

Ingredients

  • 2 lbs. 90% lean fresh ground beef
  • 1 large onion, diced
  • 1 green pepper, finely diced
  • 2 cloves garlic, minced
  • 1 28 oz. can crushed tomatoes
  • 2 cups instant brown rice
  • 2 cups water
  • 1 tsp. beef bouillon or beef bouillon cube
  • 1 tsp. seasoned salt
  • 1/2 tsp. black pepper
  • 3 Tbsp. chili powder
  • 1/2 tsp. cumin

Instructions

  1. In a large skillet with a lid, brown ground beef with onion, pepper and garlic until no pink remains.
  2. Drain excess fat.
  3. Add crushed tomatoes, chili powder, cumin, salt, pepper, and beef bouillon.
  4. Stir well on medium/high heat until bubbly.
  5. Add water and rice.
  6. Stir well and cover.
  7. Simmer on low for 30 minutes.
  8. Adjust seasonings to your taste. More salt, pepper, etc.
  9. Serve with a fresh salad and bread.
