Reese’s Peanut Butter Cup Chocolate Chip Cookie Bars

My husband really loves Reese’s Peanut Butter Cups!  This past Father’s Day weekend, I decided to incorporate this yummy candy into a cookie bar that my everyone in my family would love.  This peanut better lover’s dessert is loaded with crunchy peanut butter, miniature Reese’s Peanut Butter Cups, and of course some semi sweet chocolate chips for those of us who like chocolate in everything:)  These cookie bars are simple to make, take very little time to prepare and can be served warm or at room temperature with a big glass of cold milk.  What a perfect way to end the day!

Reese’s Peanut Butter Cup Chocolate Chip Cookie Bars

Ingredients

  • 1 3/4 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup crunchy peanut butter
  • 1 egg
  • 2 tsp. vanilla
  • 1/2 cup semi sweet chocolate chips
  • 14 miniature(not the baking one's or the bite sized) Reese's Peanut Butter Cups, quartered

Instructions

  1. Preheat your oven to 350 degrees.
  2. Lightly spray an 8 x 8 baking dish with non stick cooking spray.
  3. In a medium sided mixing bowl combine the flour,salt and baking powder.
  4. Set aside.
  5. In your Kitchen Aid Mixer, beat the butter and sugars together until light and fluffy.
  6. Add the peanut butter, vanilla and the egg and mix together until well combined.
  7. Slowly add in the dry ingredients, until just combined.
  8. Stir in the chocolate chips and the chopped Reese's Peanut Butter Cups.
  9. Spread the batter evenly into your baking dish and bake for 28-30 minutes or until a toothpick inserted into the cookie bars comes out clean with a few moist crumbs.
  10. Cool for 20 minutes if serving warm.
  11. Makes 12 good sized bars.

    These bars had a good flavor..real yummy. However, the texture was rather dry. I think they need an extra egg for binding purposes and possible just a half a cup of peanut butter vs one cup. The Reeses PB flavor will take its place. Perhaps one cup of brown sugar vs half a cup. This would give more of a cookie dough texture, more moisture & richer flavor.. important for cookie bars. Wow I think I rewrote your recipe. But its worth another shot & thanks for all your yummy recipes!

      Thanks Lisa! I don’t remember the texture being dry when I made these, but maybe it was because I was too in love with all of the peanut butter going on 🙂 I will have to try your suggestions the next time I make these!     Sounds great! I have a question about one ingredient. In the list of ingredients it shows baking powder, but in the instructions it shows baking soda. Which one?
