Raspberry Lemon Scones

This weekend I bought a big bag of juicy lemons to cheer me up and raise my hopes that Spring is right around the corner.  We still have flurries in the air, snow on the ground and it looks kind of gloomy, but a girl can be hopeful right?  Either way, these Raspberry Lemon Scones are fantastic in any weather and they did cheer me up!   These would be great for a brunch, or by themselves with coffee in the morning.  If you have a case of the winter blues and need a pick me up, try these scones and brighten up your day:)

Raspberry Lemon Scones

Ingredients

  • 5 Tbsp. unsalted butter
  • 1/3 cup sugar
  • 2 eggs, lightly beaten
  • 1/2 tsp. vanilla extract
  • 1/4 cup heavy cream
  • zest of 1 lemon (save lemon)
  • 2 cups all purpose flour
  • 1 Tbsp. baking powder
  • 1/4 teaspoon salt
  • 1 cup frozen raspberries
  • FOR THE GLAZE
  • juice from the lemon you reserved
  • about 1 cup of confectioners sugar

Instructions

  1. Preheat the oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. In your Kitchen Aid mixer, cream the butter for 3 minutes. Slowly add the sugar and mix for 2 more minutes.
  4. Scrape down the sides and bottom of the bowl to make sure all the sugar and butter have mixed thoroughly.
  5. Mix in the eggs, then add the vanilla, heavy cream, and lemon zest.
  6. Sift together the flour, baking powder, and salt.
  7. Add the dry ingredients to the wet and mix just until combined.
  8. Gently fold in the raspberries.
  9. Turn the dough out onto a lightly floured surface.
  10. Form into an 8-inch circle and cut into 8 equal wedges.
  11. Separate the wedges and allow 1/2 inch space between each one.
  12. Bake for 20-25 minutes until the tops are lightly browned.
  13. Combine the lemon juice and confectioners sugar in small saucepan on low heat and whisk until smooth.
  14. After the glaze cools, drizzle across the scones.
  15. *Makes 8 Large scones.
