Pumpkin Spice Chocolate Chip Cookies

Pumpkin Spice Chocolate Chip Cookies for Dessert

Pumpkin. I know everyone this time of year can’t wait to sip on a Pumpkin Spice Latte, but me, I would rather be baking with some pumpkin. I love the comforting taste of pumpkin baked with warm spices like cinnamon, nutmeg, ginger and clove and the moist texture you always get when you add it to your favorite baked goods. I was craving some chocolate chip cookies yesterday and as I got all of my ingredients out on my kitchen counter, I had an idea! Add pumpkin! These delicious fall inspired Pumpkin Spice Chocolate Chip Cookies were not only moist and tasty, but they were really easy to make too!

Pumpkin Spice Chocolate Chip Cookie Dough

This cookie dough comes together quickly. After I blended all of the ingredients in my mixer, it was time to add the chocolate. Yum! I decided to add dark chocolate chips to this recipe instead of my usual semi sweet. I wanted a richer flavor, and for some reason, the dark chocolate chips seem to be larger in size than regular chocolate chips.  No problem… more chocolate in every bite is never an issue for me!

Preparing Pumpkin Spice Chocolate Chip Cookies

For the first 2 dozen cookies, I used my cookie scoop to make sure all of the cookies were the same size. They always come out nicely when I do this, but sometimes I like a more rustic looking cookie. For the next 2 dozen cookies I just used a large spoon and dropped the dough onto the parchment paper. They didn’t all look perfect, but I kind of liked them that way! Whichever way you prefer, either will leave you with yummy cookies!

Pumpkin Spice Chocolate Chip Cookies Ready for the Oven

My children couldn’t wait to have one of these cookies warm and fresh from the oven along with a big glass of cold milk. Treating my family to these cookies for dessert last night was such a great way to start off the weekend. We have rain and snow in the forecast for the next few days, so I guess we’ll just have to stay inside, get cozy, watch movies and eat these cookies! Sounds good to me! Have a wonderful weekend!

Freshly Baked Pumpkin Spice Chocolate Chip Cookies for Dessert

Pumpkin Spice Chocolate Chip Cookies

Ingredients

  • 1/3 cup unsalted butter, softened
  • 1/3 cup shortening
  • 3/4 cup pumpkin puree
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 tsp. vanilla
  • 4 cups all purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 2 1/2 cups dark chocolate chips

Instructions

  1. Preheat your oven to 375 degrees.
  2. In your Kitchen Aid Mixer, cream the butter, shortening, pumpkin and sugars until combined well.
  3. Add the eggs and vanilla and mix well.
  4. Slowly add the flour and the rest of the dry ingredients.
  5. Mix until just combined.
  6. Stir in the dark chocolate chips.
  7. Using a cookie scoop or a large spoon, place Tablespoons sized amounts of cookie dough onto your parchment lined baking sheets.
  8. Bake for 8-10 minutes.
  9. Remove from the oven and let sit for 1 minute before transferring them to a cooling rack.
  10. Serve warm or room temperature with milk or coffee.
  11. Makes about 4 dozen cookies.
  12. *To freeze- Let cookies cool completely and then store in a freezer friendly container or plastic bag.
  13. Enjoy!
