Pipe Rigate Pasta with Vegetable Ragu

October 30, 2013 by Shannon

Sometimes a simple pasta meal with a glass of wine in the middle of the week is just what I need!  This Pipe Rigate Pasta with Vegetable Ragu is a delicious week night meal that doesn’t take long to prepare.  The Vegetable Ragu can simmer on the stove while you help the children with their homework and unwind from the day.  Cook the pasta, top with ragu, fresh parsley and Parmesan cheese, pour yourself a glass of wine and enjoy the rest of your evening.  This meal is also great for a date night in.  Wait for the children to go to bed, have a late dinner with your love and enjoy a movie together!  You can also serve this pasta with a fresh salad and crusty bread for a perfectly satisfying vegetarian meal.  I don’t think you will even miss the meat!  Enjoy!

This does sound like the perfect date meal. I love having alone time with my husband after the kids retreat to their beds. It’s nice to eat dinner and visit, and not be interrupted… (=
