Pepper Jack Ham & Potato Soup

Pepper Jack Ham Potato Soup

My family and I have been really enjoying some time at home just being together and catching up on things we didn’t get to do right before the Holidays.  I love lazy weekends.  When I say lazy, I don’t mean that we don’t do anything, but just that we go about our day casually and get to do a few relaxing things like watch a movie together or play a board game in the afternoon.  During nap time I might get the chance to read a book while I’m warm and cozy under a blanket.  Things like that.  Weekends when we don’t really have anything planned are my favorite.  To make it even better, yesterday I made this simple, but tasty, comforting Pepper Jack Ham & Potato Soup with some leftover foods we had in the refrigerator from Christmas, and I think you’re going to love it!

Softening the Onions and Making a Roux

This soup is full of delicious flavors and you can most likely throw it together with leftovers from your Holiday dinner.  Chopped ham, potatoes, and green beans are simmered with russet potatoes, milk, Pepper Jack & Cheddar cheeses for a great bowl of soup that’s perfect for lunch or dinner.

First you peel and cube your potatoes.  Place them in a pot of cold water and cook them for about 20 minutes or so until they are fork tender but not falling apart.  Then drain the potatoes making sure to reserve some of the liquid.  You then melt the butter, soften a little onion, and then add some flour to make a roux.  Slowly add in the reserved liquid, milk and the freshly grated cheeses.

After a good stir, add the cooked ham, cooked potatoes and steamed chopped green beans and simmer the soup on your stove for 30 to 40 minutes, stirring frequently.

I folded some laundry and caught up on a few shows while I made this soup and it made such a nice meal when it was dinner time.  Every once in a while my Sundays call for a no hassle meal and this was perfect.  I served this hot soup in big, rustic bowls with some warm dinner rolls and some fresh fruit.

Comforting Pepper Jack Ham Potato Soup

Warm Pepper Jack Ham Potato Soup

Pepper Jack Ham & Potato Soup

Ingredients

  • 4 large russet potatoes, peeled, cubed, cooked and drained (after cooked, reserve 2 cups of the water)
  • 1/3 cup butter
  • 1/2 large onion, finely chopped
  • 1/3 cup all purpose flour
  • salt & pepper to season
  • 6 cups of 2 % milk (you may use some half & half if you want an even richer flavor)
  • 2 cups freshly grated Pepper Jack Cheese
  • 1 cup freshly grated Sharp Cheddar Cheese
  • 3 cups chopped or cubed ham
  • 1 1/2 cups steamed green beans, chopped

Instructions

  1. In a large stock pot, cook your peeled and cubed potatoes until fork tender but not falling apart.
  2. Drain, set potatoes aside and reserve 2 cups of the liquid.
  3. Melt the butter over medium heat and soften the finely chopped onion until translucent.
  4. Add the flour and stir.
  5. Slowly add the reserved liquid and the milk.
  6. Bring the liquid to a simmer and add the cheeses, ham, potatoes and green beans.
  7. Stir well and simmer on low for 30 - 40 minutes to thicken, while continuing to stir frequently, being careful not to burn.
  8. Turn off the heat, cover and let sit for a while longer to thicken.
  9. Serve the soup hot with fresh bread.
  10. Serves 6-8.
  11. Enjoy!
