PB & J Chocolate Chip Granola

As promised, I am back today sharing another great snack for summer break.  I have a goal for myself to have a bunch of great, homemade snack recipes on hand to keep my children happy all summer!  This PB & J Chocolate Chip Granola is sooo good!  I don’t know how may little pieces I ate as I was packaging it up, but I can tell you it was a filling snack:)  My children love to eat this slightly chewy mixture just by itself.  I actually put some into snack sized baggies and they have taken them for a school snack too.  You can also serve this over plain Greek or French Vanilla yogurt for breakfast.  Either way, you can’t go wrong with a snack that tastes like Peanut Butter & Jelly!

PB & J Chocolate Chip Granola

Ingredients

  • 1 1/2 old fashioned oats
  • 1/2 cup crunchy peanut butter
  • 1/2 ground flax seed
  • 1/2 your favorite jam or jelly ( we use homemade strawberry jam...yum!)
  • 1 tsp. vanilla
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a large cookie sheet with parchment paper.
  3. In your Kitchen Aid Mixer, combine all ingredients well.
  4. Place the mixture on the parchment paper and kind of break it up and separate it into pieces with a spoon.
  5. Bake for 6 minutes.
  6. Turn the granola over well to make sure you have even browning and no chocolate burning.
  7. Bake another 5 minutes.
  8. Remove from oven and move and turn it again.
  9. Cool completely.
  10. Store in an airtight container for up to 1 week.
  11. Serve on top of yogurt or just by itself.
  12. Enjoy!
