One Pot Chicken & Tomato Pesto Pasta

15 Minute One Pot Chicken & Tomato Pesto Pasta

As much as I have enjoyed a fun summer with my family, I really do like getting back to a good routine when school starts. Back to School time is always busy, so it’s helpful to have a few simple recipes on hand for those weeknights. This 6 ingredient, One Pot Chicken & Tomato Pesto Pasta is a delicious family meal that can be ready and on your dinner table in just minutes!

Ingredients for Chicken & Tomato Pesto Pasta

If you’ve been browsing around in the pasta aisle at Walmart lately, you may have noticed Barilla Pronto Pasta. It’s nice to keep Barilla Pronto Patsa on hand in your pantry for quick meals and it’s available in a variety of versatile cuts, including half-cut spaghetti, penne and rotini too. For this recipe we will be using our family’s favorite- penne, along with a jar of 100% All Natural Barilla Pesto Sauce. Yum!

Cooked Chicken Breast pieces for Pesto Pasta Meal

Start by heating a little extra virgin olive oil in a large skillet and adding your precooked chicken breast pieces. You can even use a rotisserie chicken!

Adding Chicken Broth to Chicken & Tomato Pesto Pasta

After a few minutes of heating the chicken through, add the Barilla Pronto Penne Pasta along with 3 cups of chicken broth, vegetable broth or water (we like to use broth for a deeper, heartier flavor in this dish, but water works just fine if you don’t have the other on hand) along with your ripe cherry or grape tomatoes. This time of year we are able to use tomatoes from our garden!

 Add Fresh Cherry Tomatoes to Pasta

Stir the pasta, chicken and tomatoes frequently while the penne cooks for 10 minutes uncovered. It’s amazing how fast this all comes together!

Stirring Chicken & Tomato Pesto Pasta

Remove your skillet from the heat and then add the whole jar of Barilla Pesto Sauce. Give everything a good stir to make sure that those authentic Italian herbs coat every piece of pasta! Oh, it smells so good!

Adding Barilla Pesto Sauce to Pasta

Turn off the heat, top the penne with a generous amount of freshly grated Parmesan cheese and serve immediately with a side salad and bread!

Easy to Make Chicken & Tomato Pesto Pasta for Dinner

One Pot Chicken & Tomato Pesto Pasta

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 2 cups of cubed or torn bite sized chicken breast
  • 1 box Barilla Pronto Penne Pasta
  • 3 cups chicken stock / or broth or water
  • 1 cup cherry or grape tomatoes
  • 1 (6.3 oz.) jar Barilla Pesto Sauce
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. In an extra large skillet, heat a few Tablespoons of extra virgin olive oil and warm and brown the edges of your chicken.
  2. Add the Barilla Pronto Penne Pasta along with 3 cups of stock or water.
  3. Add the tomatoes.
  4. Make sure the pasta is pretty much covered with the liquid and bring it to a boil for 10 minutes, stirring frequently.
  5. Remove the pan from the heat, add the jar of Barilla Pesto Sauce, stir well until everything is coated evenly.
  6. Top with freshly grated Parmesan and serve immediately with a fresh salad and bread.
  7. Serves 6.
  8. Enjoy!
