Old Fashioned Lemon Loaf

This simple lemon loaf  is wonderful with your morning coffee or even as a dessert.  This is a favorite with our family and friends.  Everyone loves the fresh lemon favor that this bread has.  It freezes very well which allows you to slice up the loaf and then just take individual slices out at a time from the freezer.   This recipe makes 2 regular sized loaves or 1 very (affiliate) large loaf .

There’s nothing like baking with fresh lemon to get you looking forward to Spring. Lemon zest adds such a bright and fresh taste to everything and puts you in a good mood too! It makes you happy.

Old Fashioned Lemon Loaf

Ingredients

  • 3 cups all-purpose flour
  • 2 cup granulated sugar
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1(12 fl.-oz. can) Evaporated Milk
  • 1/2 cup canola oil
  • 3 teaspoons grated lemon peel (about 2 lemons and reserve lemon for later use)
  • For Lemon Syrup:
  • 2/3 cup sugar
  • Juice from 2 lemons

Instructions

  1. Preheat the oven to 350° F.
  2. Grease and flour (2) 8 x 4-inch baking pans or (1) large deep 9 x 5-inch baking pan.
  3. Combine the flour, sugar, baking powder and salt in large bowl.
  4. Beat eggs, evaporated milk, oil and lemon zest together in medium bowl.
  5. Pour egg mixture into flour mixture.
  6. Stir until just combined.
  7. Pour into prepared pan(s).
  8. Bake for 55 to 60 minutes or until wooden skewer inserted in center comes out clean.
  9. Meanwhile, to make the syrup:
  10. Combine 2/3 cup granulated sugar and 1/2 cup lemon juice (2 lemons) in small, heavy-duty saucepan.
  11. Cook over medium-low heat, stirring constantly, for about 5 minutes or until sugar is dissolved and a light syrup is formed.
  12. Using the skewer, poke numerous holes in the hot bread, piercing all the way to the bottom. Slowly drizzle the hot Lemon Syrup over the bread (Syrup will soak into the bread).
  13. Cool on wire rack for 15 minutes; run knife around edge of bread.
  14. Remove bread to wire rack to cool completely.
