Oatmeal Meatloaf

Meatloaf and mashed potatoes…  what a classic dinner combination!  I think sometimes meatloaf gets a bad reputation for being dry and well, just not that great.  This recipe always delivers a moist delicious meatloaf with a sweet sauce on top that my husband says we cannot go without!    There are no breadcrumbs in this recipe, the oatmeal helps bind things together, but allows the meatloaf to be moist and flavorful every time.  If you have ground beef  in your refrigerator and are trying to decide what to make for dinner this week, please give this meatloaf a try.  Serve this with mashed potatoes and a fresh vegetable.   I am guessing that this will become a family favorite just like it has become a favorite  in our home.

Oatmeal Meatloaf

Ingredients

  • 1 cup oatmeal
  • 1 1/2 cups milk
  • 2 1/2 lbs. lean ground beef
  • 3 eggs, lightly beaten
  • 1 medium onion, finely chopped
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • For the Sauce:
  • 6 Tbsp. brown sugar
  • ½ cups ketchup
  • 2 teaspoons honey mustard

Instructions

  1. Soak the oatmeal in the milk.
  2. Add the rest of the meatloaf ingredients and mix well.
  3. Place the mixture in a large casserole dish, form a loaf, and make some indents in the top to hold the sauce.
  4. To make your sauce- mix the brown sugar, ketchup, and mustard together and spread about 2/3 of the mixture over your meatloaf.
  5. Bake at 350º F for 35 minutes.
  6. Take your meatloaf out of the oven and with a spoon, get rid of excess grease, as well as any fat that might have accumulated.(Sometimes I am able to tilt the pain to drain the fat...but be careful...you don't want to drop your meatloaf!)
  7. Add the rest of the sauce to the top, and bake for 35 more minutes.
  8. Check the loaf with a meat thermometer to ensure proper cooking.
  9. Let it stand about 10 minutes before serving.
