Nutella Smores Oatmeal Bars

If you aren’t making Smores over a camp fire this weekend, you might want to try this delicious alternative.  These chewy oatmeal bars are made with Nutella, semi sweet chocolate,  mini marshmallows and will definitely satisfy that sweet tooth.  I was running a little behind schedule yesterday when I made these for my family, so I cut and served them while they were still pretty warm.  Oh, my…SO.DARN.GOOD!!  I packaged up the last few bars into snack sized baggies for my older children to pack as a snack for school.  This recipe is simple and quick, which works out perfect during this busy time of year.  If your family loves Smores and Nutella, give these bars a try.  Have a wonderful weekend!

Nutella Smores Oatmeal Bars

Ingredients

  • 2 cups old fashioned oats
  • 1 cup crushed graham crackers
  • 1/4 cup ground flax seed
  • 1/2 cup brown sugar, loosely packed
  • 1/2 cup semi sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 tsp. salt
  • 1/3 cup Nutella
  • 1/4 cup honey
  • 3 Tbsp. unsalted butter
  • 3 Tbsp. canola oil
  • 1 Tbsp. water
  • 1/2 tsp. vanilla

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 8 x 8 baking dish with a cut piece of parchment paper.
  3. In your Kitchen Aid mixer, combine all of the dry ingredients and mix.
  4. In a small saucepan, melt the butter on low.
  5. Turn off heat and add the Nutella, honey, oil, vanilla and water.
  6. Using a small whisk, combine well.
  7. Add the wet mixture to the dry mixture and combine.
  8. Pour mixture into the baking dish and with the back of a large spoon, press into the baking dish evenly.
  9. Bake 28-30 minutes.
  10. It may look soft, but it will firm up as it cools.
  11. Cool for at least 30 minutes before cutting.
  12. Serve with a big glass of milk:)
  13. Enjoy!
