No Machine Strawberry & Pistachio Ice Cream

I can’t believe June is here already!  My vegetable garden is planted and the weather is finally on the warm side.  Today the humidity kicked in, but I am really enjoying most of my time outside.  Last weekend we worked on getting out our patio furniture and we planted grass where tractors and trucks had been the past few months working on our addition.  I am hoping that all of this warm weather and the rain we got last night will help my side yard grow in no time.  I can’t wait to see some green in that area.

Easy Strawberry & Pistachio Ice Cream

With the warm weather, comes the cravings for cool, sweet treats.  Ice Cream is on the top of my list this time of year.  Sometimes on the weekends we take a nice drive and stop at our favorite little ice cream place for cones, but other times the day just gets away from us.  That’s where this yummy Strawberry & Pistachio Ice Cream comes in!  This ice cream is so simple to make and the best part is, is that you don’t even need and Ice Cream Maker!  Sweet and juicy chopped strawberries, pistachio paste, and whole roasted pistachios are blended with fresh whipped cream and sweetened condensed milk, then frozen for a rich and creamy ice cream that your family will love and enjoy at home!  That fresh strawberry flavor complete with bits of pistachio in every bite is just the perfect way to relax at the end of a long, hot summer day!

Homemade Pistachio Paste

I have been searching for the perfect pistachio paste for a while now.  I haven’t found it, so I decided to make my own simple version.  I used my little Magic Bullet to create a pistachio paste out of pistachios and water.  2 ingredients and that it!

The pistachio paste gave this ice cream the most wonderful favor and the best part was that there wasn’t anything artificial added to it.

Adding the Whipped Cream to the Mixture

Mixing this all together was making me hungry too!  I think I spent a lot of time thinking about dessert that day! 🙂

Pour the Homemade Strawberry & Pistachio Ice Cream into Container

After everything is blended, just pour the mixture into any 2 qt. container that you can cover well and freeze!  It’s that simple.  You can have your homemade ice cream in 6 hours or so.

Spread evenly in the container and freeze!

I made this ice cream in the late morning on Sunday, and by the evening it was ready to be served for dessert!  If you love pistachios and strawberries like me, treat yourself to this delicious homemade ice cream this summer!

Homemade Strawberry & Pistachio Ice Cream in a Cone

No Machine Strawberry & Pistachio Ice Cream

Ingredients

  • 1/2 cup roasted pistachios (shells removed)
  • 1/4 cup water
  • 1 cup fresh strawberries, chopped
  • 2 cups heavy whipping cream
  • 1 (14 oz.) can sweetened condensed milk
  • 1/4 cup roasted whole pistachios (shells removed)

Instructions

  1. Chill your Kitchen Aid Mixing Bowl in the refrigerator for a few minutes.
  2. Combine the 1/2 cup pistachios with the 1/4 cup of water in a small food processor or a Magic Bullet and create a paste.
  3. Add a little more water in small amounts if needed to get that paste like consistency.
  4. Set aside.
  5. In a large mixing bowl, combine the sweetened condensed milk with the pistachio paste, the chopped strawberries and the 1/4 cup of whole pistachios.
  6. Grab your mixing bowl and with the whisk attachment, whip the heavy whipped cream until you have peaks.
  7. Carefully fold the whipped cream into the sweetened condensed milk mixture until it is well blended.
  8. Pour the mixture into a 2 qt. container, cover and freeze for at least 6 hours or so.
  9. Enjoy!

    We have been searching for a pistachio ice cream that tasted like the one we used to have back home..This was awesome! Really easy to make, had real pistachio flavor!

    One thing I might change next time is that I would add less of the condensed milk (or more whipping cream) since it was too sweet us.

    I will be making this again!

      I forgot….I did add a little bit of spinach to the pistachio paste to add a bit more green color, I read that from another blog. Totally works though, and does not affect the flavor at all.

    Adding the strawberries with ‘pistachio’s’ is an awesome idea!
    I usually have pecans in my ice cream with the strawberries.
    I never thought of adding pistachio’s….where have I been?!!
    Another “duh” moment for me.
    I guess I couldn’t see the forest because all the trees where blocking it…LOL!!
