Inside Out Stuffed Shell Casserole

On Sundays I like to make some type of pasta meal for my family.  We have more time to sit at the dinner table together and catch up over a nice dinner at the end of the weekend.   I like to make a fresh salad and serve crusty bread along with the pasta, and of course end the meal with a homemade dessert!  It’s a meal that everyone looks forward to each week.  My children especially loves a good pasta dish and if it’s loaded with sauce and cheese, then we are good to go:)  Stuffed Shells are one of our favorite meals, but it can be a little time consuming.  This Inside Out Stuffed Shell Casserole gives you all of the creamy, cheesy taste of stuffed shells, without all of the hassle.  Creamy ricotta cheese is blended with spinach, 3 cheeses, and sauce, then mixed with medium sized pasta shells for a delicious, comforting meal.  My children love this casserole so much that I never hear any complaints about the spinach!  It’s easy to sneak in a vegetable with all of those cheeses:)  This casserole is a great meal anytime during the week, but it’s also perfect for a family get together or pot luck.  If you are looking for a new casserole to share with your loved ones, give this tasty dish a try!

Inside Out Stuffed Shell Casserole

Ingredients

  • 1 lb. medium sized pasta shells (I use Luigi Vitelli #22 Pasta Shells)
  • 1 (15 oz.) container Ricotta cheese
  • 1 (9 oz.) package of frozen spinach, thawed and squeezed dry
  • 1 1/2 cups Mozzarella cheese, shredded, and divided
  • 1/2 cup Romano cheese, shredded
  • 1/2 cup Parmesan cheese, shredded
  • 2 eggs, lightly beaten
  • 1/2 Tbsp. dried parsley
  • 1/4 tsp. dried basil
  • 1/2 tsp. salt
  • sprinkle of black pepper
  • 1/4 tsp. garlic powder
  • 1 (24 oz.) jar of your favorite spaghetti sauce

Instructions

  1. Preheat your oven to 350 degrees.
  2. Cook pasta according to the package directions, drain and add your spaghetti sauce and mix.
  3. In a large mixing bowl, combine the ricotta, 1/2 cup of the Mozzarella, the Romano, and Parmesan cheeses along with the eggs, salt, pepper, parsley, basil and garlic powder,
  4. Mix well.
  5. Mix 1/2 of the cheese mixture into the pasta mixture and combine well.
  6. Lightly spray the bottom of a 9 x 13 baking dish with cooking spray and put 1/2 of the pasta mixture into the dish evenly.
  7. Drop spoonfuls of the remaining cheese mixture evenly onto the pasta.
  8. Cover with remaining pasta mixture and sprinkle with 1 cup of Mozzarella cheese.
  9. Cover the casserole lightly with foil and bake for 30-35 minutes or until cheese is melted and the casserole is bubbly.
  10. Serve warm with a fresh salad and bread.
  11. Serves 6-8.
