Fudgy Butterscotch Brownies

I was organizing my baking cupboard yesterday and I found some yummy butterscotch chips that I wanted to use.   My children have been asking for brownies all week, so I decided to make butterscotch brownies!  Oh my…these are good!  If you like butterscotch, you have to try these.  These brownies are fudgy and the butterscotch adds a wonderful layer of flavor.  If you are craving something sweet this weekend, give these brownies a try!

Fudgy Butterscotch Brownies

Ingredients

  • 7 tablespoons unsalted butter
  • 2 ounces unsweetened chocolate, finely chopped
  • 2 ounces semisweet chocolate, finely chopped
  • 1 cup granulated sugar
  • 1/4 tsp. salt
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 cup all purpose flour
  • 1 (12 ounce) bag butterscotch chips

Instructions

  1. Preheat the oven to 325 degrees.
  2. Melt the butter in a high sided saucepan over medium heat, keeping an eye on the pan so the butter does not burn.
  3. When the butter is hot, remove the pan from the heat and add the chopped chocolate.
  4. Stir once and set aside to finish melting while you prepare the pan.
  5. Line an 8-inch square pan with foil or parchment paper, letting several inches hang over two opposite sides to create handles.
  6. Grease the pan and foil and set aside.
  7. Stir the chocolate and butter mixture until it is smooth and the chocolate is completely melted. With an electric mixer, beat in the sugar and salt, then beat in the eggs, one at a time.
  8. Add the vanilla and stir.
  9. Fold in 3/4 of the bag of butterscotch chips.
  10. Spread the batter in the prepared pan.
  11. Bake until a toothpick inserted in the middle of the pan comes out with moist crumbs, not raw batter 35-40 minutes.
  12. Cool on a rack or place in the freezer until brownies are cool and set.
  13. In a small sauce pan on low heat, melt butterscotch chips with a splash of milk, stirring constantly until smooth.
  14. Pour the butterscotch into a sandwich bag, cut the end off and drizzle butterscotch across brownies.
  15. Let the butterscotch harden and then lift brownies out of the pan with the handles you created and cut the brownies into squares and serve!
