Freezer Cooking One Meal at a Time

Sometimes I cook just to stock my freezer, but most of the time I stock my freezer one meal at a time.  I almost always make a double recipe of whatever I am cooking.  The other morning I made a double batch of  Warm Baked Oatmeal.  It did not take me anymore time to make a double batch than it would have to just make the single recipe.   It really has become second nature to me.  The reason I do this is simple.  For convenience.  And for my sanity:)  With a large family like mine, I am always in the kitchen.  Even though I enjoy being in the kitchen, there are hectic days where the kids have extra curricular activities after school or appointments and my time is limited.  It is so nice to be able to pull out something from the freezer and still serve your family a great home cooked meal.   Also when you are menu planning for the week, you know that if you are pulling muffins out of the freezer for  breakfast the night before, you can maybe sleep in an extra 15 minutes or get an extra 15 minutes of exercise that morning .  Whatever your schedule may be,  give freezer cooking a try.   I think you might like it.   If you are already freezing your meals what are your family’s favorite freezer meals?
