Freezer Breakfast Burritos

A warm breakfast sometimes takes too much time in the morning.  These breakfast burritos can be made ahead of time and frozen individually.  This is a simple recipe that your family will love.  Change the types of meat, cheeses or vegetables to your family’s taste to create your own!   On a busy morning these can be taken directly out of the freezer and warmed in the microwave for a quick, filling breakfast.

Freezer Breakfast Burritos
Ingredients
  • 18 eggs
  • 1/4 cup butter
  • 1/2 onion diced finely
  • 1/2 green pepper diced finely
  • 1/4 cup milk
  • 1/2 lb sausage browned and fat drained, or cooked bacon, copped ham, etc.
  • 1/2 of a 26 oz bag frozen hash browns-shredded potatoes
  • 2 cups Sharp Cheddar Cheese shredded
  • salt & pepper to season
  • 20 flour tortillas
Instructions
  1. Brown the sausage with the onion and pepper until browned.
  2. Drain excess fat from pan.
  3. Add the butter and the hashed browns and cook until browned.
  4. In a large mixing bowl, beat eggs and milk.
  5. Pour egg mixture into the pan with the rest of the ingredients.
  6. Cook on Medium-High heat.
  7. Season with salt and pepper.
  8. Constantly stir until eggs are scrambled like and set. This may take a bit, you are cooking a lot of eggs, so be patient....you don't want to burn them.
  9. When eggs are set and scrambled, continue to stir a few minutes to get rid of any wetness.
  10. Add cheddar cheese and stir gently.
  11. Let cool until just warm and assemble.
  12. Warm tortillas in the microwave because you want them soft to work with.(I put 10 on a plate for about 1 1/2 minutes- but your microwave times may vary.)
  13. Fill tortillas with egg mixture and tuck the ends in and roll up tightly.
  14. If these are all being served right away, you can put in a 9x13 baking dish,sprinkled with more cheese is desired and bake at 350 degrees for about 15 minutes. You can serve these with salsa and sour cream.
  15. If freezing, you can wrap each burrito in a paper towel individually and then place all burritos in a gallon sized freezer bag. When ready to eat, take out a burrito with paper towel still on, place on microwave safe plate and heat for about 1 1/2 minutes depending on your microwave.
