Cinnamon Nut Coffee Cake

For as long as I can remember, for every family brunch or holiday, my family makes this wonderful Cinnamon Nut Coffee Cake.  It just wouldn’t be a special occasion without it!  This cake is topped with a crunchy cinnamon- nut mixture, while more cinnamon & nuts are swirled into the moist cake.  A slice of this delightful cake with a hot cup of coffee is pure heaven!  This recipe is fairly simple to prepare and serves 12.  Treat your family and friends and bring this to your next get together!  This cake also freezes beautifully.

Cinnamon Nut Coffee Cake

Ingredients

  • FOR THE FILLING:
  • 1/2 cup brown sugar
  • 6 Tbsp. white sugar
  • 1/2 tsp. vanilla
  • 1 1/2 tsp. cinnamon
  • 1 1/2 cups finely chopped nuts
  • 1 Tbsp. butter, melted
  • FOR CAKE:
  • 3/4 cup butter, softened
  • 2 1/4 tsp. vanilla
  • 1 1/2 cup sugar
  • 3 eggs
  • 2 cups flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/4 cups sour cream

Instructions

  1. Pre heat your oven to 350 degrees.
  2. Mix all the filling together in a mixing bowl and set aside.
  3. In a Kitchen Aid mixer, cream butter, then add vanilla and sugar gradually.
  4. Add eggs one at a time and beat until well blended.
  5. Sift the dry ingredients.
  6. Add the dry ingredients alternately with the sour cream.
  7. In the bottom of a well buttered and greased 9 inch tube pan, pack 1 cup if the filling.
  8. Then 1/2 of the cake batter, 1 more cup of filling, the other 1/2 of the cake batter, then sprinkle the remaining filling on top of the cake.
  9. Bake for 1 hour or until a toothpick comes out clean.
