Chocolate Banana Bread

If you have any bananas in your kitchen that are pretty ripe…PLEASE give this recipe a try.  It is great for breakfast with some fresh fruit or even as a snack or dessert!  I substitute extra virgin coconut oil for the butter to make it a little healthier and the slightest hint of it is wonderful in this bread.  This also freezes wonderfully so if you have enough bananas consider making a double batch.

Chocolate Banana Bread

Ingredients

  • 1 3/4 cups flour
  • 1/4 cup cocoa powder
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs, lightly beaten
  • 1/2 cup unsalted butter, melted and cooled ( you can use extra virgin coconut oil as a substitute)
  • 3 ripe bananas,mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet chocolate chips + 1/4 cup for top of bread

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray with a non stick vegetable or butter the bottom and sides of a 9 x 5 loaf pan.
  3. In a Kitchen Aid mixer, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. In a mixing bowl combine the mashed bananas, eggs, melted butter, and vanilla.
  5. Stir the banana mixture into the dry ingredients until just combined and batter is thick and chunky. Fold in the chocolate chips.
  6. Scrape batter into prepared pan and sprinkle the top of the bread with 1/4 cup chocolate chips. Bake until the bread has risen and a toothpick inserted in the center comes out clean, about 55 to 65 minutes.
  7. Place on a wire rack to cool and then remove the bread from the pan.
