Chilled Pumpkin Spice Cake

If you crave everything pumpkin this time of year, then you are going to love this Chilled Pumpkin Spice Cake!  This moist pumpkin spiced cake is topped with a light, creamy pumpkin spiced chilled frosting that will keep pumpkin lovers at your house coming back for more.  My children have a half day of school today, so we are planning some fun fall activities this afternoon and then we will be ending our day on a sweet note with this delicious cake.   This cake uses Jell-O Pumpkin Spice Instant Pudding & Pie Mix and is very simple to prepare.  If you have little helpers at home you can have so much fun in the kitchen making this together!  Whether you serve this on the weekend, on Halloween or even on a weeknight as a late night dessert, this tasty fall treat is sure to please.

Chilled Spiced Pumpkin Cake

Ingredients

  • 1 box yellow cake mix
  • 3 boxes Jello Pumpkin Spice Instant Pudding Mix
  • 5 eggs
  • 1/2 cup water
  • 1/2 cup oil
  • 1/2 cup milk
  • 1 (8 oz.) container Cool Whip
  • 1 1/2 cups milk

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a large mixing bowl, combine the cake mix, 2 boxes of the pudding, water, oil and 1/2 cup of milk.
  3. Beat in the eggs, one at a time.
  4. Spray a bundt pan well with cooking spray and pour batter into pan.
  5. Bake for 40 - 45 minutes until toothpick inserted into cake comes out clean.
  6. Let sit 5 minutes then remove from pan and place onto a plate or cake stand to cool completely.
  7. When cake has cooled, In a mixing bowl, combine the Cool Whip, 1 box of the Pumpkin Spice Instant Pudding Mix and 1 1/2 cups milk.
  8. I like to whip this quickly with my handheld mixer.
  9. Cover with plastic wrap and place in the refrigerator for 15-20 minutes.
  10. Frost the cake and serve chilled.
  11. Store any leftover cake covered in the refrigerator.
  12. Enjoy!
  13. Serves 10.
