Broccoli & Pepper Jack Cheese Dip

Have you been busy thinking about the Holidays?  I have been putting it off a bit because it’s a little early, but this morning we were covered in a blanket of snow and I feel like I am ready now.  Ready to plan menus, parties and shopping lists.  One thing I love to make around this time of year are appetizers.  When you have a house full of family and friends, you have to have good food for everyone to snack on while the main meal is finishing up in the oven.  This Easy, Creamy Broccoli & Pepper Jack Cheese Dip is a wonderful appetizer that you can serve to your guests this season!

Ingredients for Broccoli & Pepper Jack Cheese Dip

Steamed tender broccoli florets are mashed into bite sized pieces and mixed with softened cream cheese, a little mayonnaise, sour cream, freshly grated Pepper Jack & Sharp Cheddar Cheeses with a little red pepper and minced garlic.

Mixing Ingredients for Broccoli & Pepper Jack Cheese Dip

After you mix all of the ingredients together really well, the ingredients get transferred into a small casserole dish, is topped with a little more Pepper Jack Cheese and then baked in the oven for 30 minutes or so until it’s nice and bubbly.  You can even put a few baguettes into the oven along with this, the last 5 minutes or so.  After letting the dip cool a bit while you are slicing the bread, it’s ready to serve!

Adding more Pepper Jack to Broccoli & Pepper Jack Cheese Dip

This dip can be served hot, warm or room temperature.  My husband thinks this is silly because he just loves this on toasted bread, but I like this dip room temperature with carrots and celery!

Warm Broccoli & Pepper Jack Cheese Dip

Crackers, pretzels, you name it.  You can really pair this dip with what your family likes best.  If you love broccoli and cheese together, I think you are going to love this jazzed up dip!  It’s not only great for Holiday parties, but it’s perfect for potlucks and the big game too!  This recipe makes about 6 cups of dip, but I always double the recipe for large parties.  I hope you have a chance to try this yummy recipe real soon!

Creamy Broccoli & Pepper Jack Cheese Dip

Broccoli & Pepper Jack Cheese Dip

Ingredients

  • 16 oz. steamable bag broccoli florets, steamed and mashed a bit
  • 8 oz. cream cheese, softened
  • 2 cups shredded Pepper Jack Cheese, divided
  • 3/4 cup shredded Sharp Cheddar Cheese
  • 3/4 cup sour cream
  • 1/3 cup mayonnaise
  • 2 large cloves of garlic, minced
  • 1/2 cup finely chopped red pepper
  • pinch of salt and pepper

Instructions

  1. Preheat your oven to 350 degrees.
  2. Mix all of the ingredients well in a large mixing bowl, reserving 1/2 cup of the Pepper Jack Cheese.
  3. Place the mixture in a lightly sprayed small casserole dish and top with the remaining Pepper Jack Cheese.
  4. Bake in the oven for 30-35 minutes, or until the top is browned around the edges and bubbly.
  5. Let cool a bit and serve hot, warm or room temperature with toasted breads, crackers, pretzels, etc.
  6. Enjoy!

    I see what looks like diced tomatoes in the picture but not in the ingredients list. Is this an optional ingredient?
