Blueberry Almond Crumble

Who doesn’t love a great Summer dessert?  I know I sure do, but sometimes when I am busy outside or just tending to my four kiddos, time slips away from me and after dinner I have nothing prepared for dessert.  Crumbles, Crisps and Cobblers are probably my favorite kinds of desserts for two reasons.  They are quick, and always delicious!

Blueberry Mixture for Crumble

We got some pretty heavy thunderstorms the other day that made the whole house turn dark.  I was sitting next to the open window and right before the storm rolled in all you could hear was quiet.  As the sky grew darker and darker, you could hear the big raindrops bouncing off of the siding; slowly, then faster as the rain clouds made their way up the hill and over our house.  I love that kind of quiet and I love the sound of the rain.  The house was still (because it was nap time 🙂 ) and the coolness of the breeze and the pitter patter of the raindrops was so relaxing.  It was really cozy too, so I decided to break away from my quiet time and bake something sweet for my loves that night because I had the time.

Blueberry Crumble Topping

This Blueberry Almond Crumble is a good old fashioned type recipe that is sure to please just about anyone.  Fresh, juicy blueberries are tossed with sugar, cinnamon and a splash of almond extract and then generously topped with a buttery oat, sliced almond and brown sugar crumble.  It’s baked until the blueberries burst and the topping is crisp and golden brown with a delicate almond flavor.

Preparing Blueberry Almond Crumble

This dessert takes only 10 or 15 minutes to prepare and it bakes in about 40 minutes.  It’s best served warm from the oven with a scoop of vanilla ice cream or fresh whipped cream.  If you’ve got fresh blueberries, serve your family this comforting dessert before Summer is over!  I promise, they will love it!

Freshly Baked Blueberry Almond Crumble

Ingredients

  • For the Berry part:
  • 1 1/2 quarts of fresh blueberries
  • 3/4 cup sugar
  • 3/4 tsp. cinnamon
  • 3 1/2 Tbsp. all purpose flour
  • 1 tsp. almond extract
  • For the Crumble:
  • 1 cup all purpose flour
  • 1/2 cup old fashioned oats
  • 1/2 cup sliced almonds
  • 1/2 cup brown sugar
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter cold and cut into cubes

Instructions

  1. Preheat your oven to 375 degrees.
  2. Rinse your blueberries and place in a medium sized mixing bowl.
  3. Add the 3/4 cup sugar, 3 1/2 Tbsp. flour, cinnamon and almond extract and toss, coating everything well.
  4. Pour the blueberry mixture into an 8 x 8 or similar baking dish.
  5. In another mixing bowl, combine the crumble ingredients and with a pastry blender, blend until the crumble is the size of course meal.
  6. Evenly sprinkle the crumble on top of the blueberries and bake uncovered on a baking sheet for 35 to 40 minutes or until bubbly and light golden brown on top.
  7. Remove from the oven and let cool for 15 minutes or so.
  8. Serve warm with vanilla ice cream or fresh whipped cream.
  9. Serves 6-8.
