Banana Waffles with Peanut Butter Syrup

Every now and then I like to make breakfast for Dinner.  My children just love this because it’s out of the ordinary and well…it’s just fun!   Yesterday, we spent most of our day outdoors.  Now that it stays light out later, it is so easy to lose track of time.  When we did finally came inside, it was too late to start the dinner I had originally planned.  I had some pretty ripe bananas on the counter that I had set aside to use for Chocolate Banana Bread, but I thought I would be creative and use them in waffles instead.  Oh, I am so glad I did:)  These waffles made my house smell like a bakery when they were cooking.  My children followed their noses into the kitchen to see what I was making as soon as the batter hit the waffle iron.  I like to use this inexpensive Belgian Waffle Maker because my children just love the big waffles it makes, but you can use whatever waffle maker you have.   I added fresh Bananas and Peanut Butter Syrup to top these yummy waffles.  There were no leftovers and I am definitely making these again.  Next time I think I will double the recipe so I can store some in the freezer for a quick breakfast on a busy morning.  The next time you have ripe bananas on your kitchen counter try a new recipe like this- you will be so glad you did!

Banana Waffles with Peanut Butter Syrup

Ingredients

  • For the Waffles:
  • 1 1/2 cups buttermilk
  • 2 bananas, mashed
  • 2 cups flour
  • 1/4 cup canola oil
  • 2 eggs
  • 1 Tbsp. brown sugar
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • For the Syrup:
  • 3/4 cup maple syrup
  • 1/3 cup creamy peanut butter
  • 1 tsp. vanilla extract

Instructions

  1. In a large mixing bowl combine all ingredients well until you have a nice batter.
  2. Do not over mix.
  3. Pour into waffle iron or Belgian waffle maker and cook.
  4. While waffles are cooking, heat syrup ingredients in a small saucepan on low.
  5. Whisk together until well combined and hot.
  6. Serve hot waffles with fresh bananas and hot peanut butter syrup.
  7. Enjoy!

    Fantastic recipe!! I served the waffles with Nutella & whip cream since we aren’t big peanut butter fans… My kids & I loved it!! Thanks so much for posting!!
