Skillet Baked Eggs with Sausage, Kale & Sweet Potatoes

I just love breakfast!  Especially on the weekends or a Holiday!  The kind of breakfasts that are rustic, filling, cozy and enjoyed with those you love the most.  Thanksgiving is this week, so that allows our family a little more time to spend together.  Movies, playroom fun, and sleeping in just a bit are some of the little things I am really looking forward to.  The first thing I do when I wake up is turn on my Keurig.  I like to get up a little earlier than my children and have my coffee right away.  I am usually not hungry until I get breakfast going for my family and clean up the kitchen.  These delicious Baked Eggs with Sausage, Kale & Sweet Potatoes make a perfect late breakfast, brunch or even dinner!

Preparing Baked Eggs with Sausage, Kale & Sweet Potatoes

I always buy sweet potatoes this time of year.  To be honest, it’s not something my family ever really made a lot when I was growing up, but they are really good for you and I like to take advantage of how reasonably priced they are this time of year.  I absolutely do not like my sweet potatoes in sweet dishes (I know weird, huh?) but I love them in savory dishes.  I think that creaminess with the hint of sweetness makes for something really special on your plate.

Adding Baby Kale to Sausage & Sweet Potatoes

I’ve also been trying to get more green, leafy vegetables into our family’s diet.  I’ve been adding organic baby kale to my smoothies, but I really am loving the kale with these baked eggs.  Preparing this tasty meal for your family couldn’t be easier!

Adding Eggs to Kale, Sausage & Sweet Potatoes

In my cast iron skillet, I soften 1 large diced sweet potato with chopped onion, and Italian sausage in a little olive oil and a touch of butter seasoned with salt and pepper, while stirring occasionally for 15 minutes.  When the sweet potatoes start getting those beautiful browned edges, I turn the heat to low and add 2 large handfuls of baby kale to the skillet and stir until they have softened and wilted.  I then turn off the heat, crack fresh eggs over the top, add a little more salt & pepper and bake for 10 minutes in a 350 degree oven.  What you get is a simply wonderful meal that is perfect for any time of the day.

Breakfast Baked Eggs with Sausage, Kale & Sweet Potatoes

Baked Eggs with Sausage, Kale & Sweet Potatoes

Ingredients

  • 1-2 Tbsp. extra virgin olive oil
  • 1/2 Tbsp. butter
  • 1 large sweet potato, peeled and diced small
  • 1 small onion, chopped
  • 1/4 lb. sweet Italian sausage
  • baby kale
  • 4 eggs
  • salt
  • pepper

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a 8 or 9 inch cast iron skillet, heat the olive oil and butter over medium heat and start browning and breaking up the sausage and softening the sweet potato and onion.
  3. Season with a little salt & pepper.
  4. Stir occasionally, making sure nothing is sticking or burning for about 15 minutes.
  5. When the sweet potatoes and sausage start getting browned around the edges, turn the heat to low and add 2 large handfuls of baby kale.
  6. Stir the kale in until it is softened and wilted.
  7. Crack 4 eggs over the top, sprinkle with a little more salt & pepper, and bake uncovered for 10 minutes.
  8. Serve warm with fruit or juice.
  9. Serves 4.
  10. Enjoy!

    One of my favorite meals ever! I often make it with black beans instead of the sausage to make it vegetarian too. Great stuff and Happy Thanksgiving!
