Apple & Cranberry Oat Crisp

November 24, 2015 by Shannon

Buttery Apple & Cranberry Oat Crisp for Dessert

The weather is cooling off and the busy holiday season is right around the corner. With all of the planning that goes into those special meals with family, I think it’s important to enjoy the days leading up to them too. When the wind is whipping and the sky is overcast, I like to head to my kitchen to make a cozy meal. I don’t think there can ever be too many comforting recipes made this time of year that you can serve your family to make them feel at home. This delicious Apple & Cranberry Oat Crisp is a wonderful dessert that’s the perfect addition to your meals for weeknights or the holidays!

Fresh Cranberries for Apple & Cranberry Oat Crisp

A buttery old fashioned oat mixture tops freshly sliced apples and bright red cranberries that are tossed with warm spices and brown sugar for a dessert that will keep you family coming back for more!

Actually, my family always comes back for more, and then there aren’t any leftovers! 🙂 That’s a good thing though… I’ll take it as a compliment!

Mixing Apple & Cranberries with Brown Sugar and Spices

It’s cranberry season and there’s nothing like the pretty red and pink color that these lovely berries add to this scrumptious dessert! I love that bouncing sound that fresh cranberries make when I pour them into a colander to rinse them off before adding them to a recipe.

Adding Apple & Cranberries to Baking Dish

There’s just something so festive and fun (and delicious) about adding cranberries to your dishes this time of year. The next time you’re at the grocery store, make sure you grab a bag or 2 from the produce section. They’re not just a pretty addition- they are actually really good for you too!

Ingredients for Buttery Oat Crumble Topping

I usually prepare this dessert in a 9 x 13 baking dish, but if you are making this for the holidays and want to do something extra special, you can bake this in individual dishes. It’s little touches like that, that people always remember.

Adding Buttery Oat Crumble Topping to Apples & Cranberries

Topping this warm, freshly baked Crisp with a scoop of vanilla bean ice cream or fresh whipped cream also makes such a lovely and rustic presentation!

If you’re longing for a cozy evening with good food by the fire, or craving a little something different than pie this holiday, treat your family to this no hassle, family favorite dessert! Enjoy!

Ingredients

  • 7 or 8 cups sliced Cortland or McIntosh apples (any good baking apple will do)
  • 2 cups fresh cranberries, rinsed
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • For The Topping:
  • 1 1/2 cups all purpose flour
  • 1 1/4 cup old fashioned oats
  • 1/3 cup brown sugar
  • 3/4 cup cold unsalted butter, diced into smaller pieces
  • 3/4 tsp. salt
  • ice cream or whipped cream to serve

Instructions

  1. Preheat your oven to 375 degrees.
  2. In a large mixing bowl combine the apples, cranberries, sugars and spices and toss to coat everything well.
  3. Pour apple mixture into a 9 x 13 baking dish evenly.
  4. In your Kitchen Aid Mixer, (you can also do this by hand with a pastry blender, but I let my Kitchen Aid do all the work) combine the topping ingredients and stir on low (increasing a few notches after a few minutes) for about 5 minutes or so or until small ball like crumbles appear.
  5. Top your apples with the buttery crumble evenly and bake for 45-50 minutes or until the top is light golden brown and bubbly around the edges.
  6. Serve warm with vanilla ice cream or whipped cream.
  7. Serves 8-10.
  8. Enjoy!

Thank you so much for sharing your apple-cranberry oat crisp recipe. I made it for Thanksgiving, and my family enjoyed it very much. I used gingersnaps for the crust, as that is what I had on hand. Absolutely scrumptious!
