Simple Apple & Cinnamon Oat Muffins for Back To School Breakfasts & Snacks

I’ve been ready for some cooler almost Fall-like air for a while now. This summer has been so hot and with my children headed back to school in a few weeks, I’m ready to start baking in the kitchen with my favorite Autumn fruit- apples. There’s nothing better than these delicious and wholesome Apple & Cinnamon Oat Muffins to start those crisp school mornings!

Bob's Red Mill Oats

Sweet, bite-sized pieces of freshly picked apples are blended into a warmly spiced buttermilk and oat batter for a moist, satisfying muffin that your kiddos can enjoy for breakfast or for an after school snack. They can even be taken on-the-go on those busy (oops… everyone woke up late) types of mornings!

Breakfast is the most important meal of the day, so it’s important that it’s a good one.

Softening Oats for Apple & Cinnamon Muffins

I like to make sure my children are getting a filling breakfast each and every day so they can stay focused at school. Bob’s Red Mill Oats are a healthy staple in our pantry because they are kiln roasted to give them that wholesome flavor we love while being rich in dietary fiber that can even help reduce cholesterol.

Ingredients for Apple & Cinnamon Oat Muffins

For this tasty muffin recipe, start by soaking your oats in buttermilk. After the oats are softened, blend the oats with whole wheat flour, brown sugar, cinnamon and nutmeg. Oh, it smells so good!

Fold in your apples and spoon the batter into paper lined muffin tins.

To make these extra special, I like to sprinkle oats on top of the muffins. It gives them a nice texture in every bite and it looks pretty too!

You can serve these muffins warm or room temperature and they freeze really well. Spend a few extra minutes in the kitchen this week and bake up a few dozen of these yummy muffins for your family! They’ll just love them!

Apple & Cinnamon Oat Muffins

Ingredients

  • 3 1/2 cups Bob's Red Mill Oats, divided
  • 3 cups buttermilk
  • 3 eggs
  • 1 3/4 brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup butter, melted and cooled
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups all purpose flour
  • 3 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 3 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 cups peeled and chopped (into bite sized pieces) apples

Instructions

  1. Soak 3 cups of your oats (reserving the other 1/2 cup) in 3 cups of the buttermilk in your Kitchen Aid Mixer for 20 minutes.
  2. Meanwhile, chop your apples and preheat your oven to 400 degrees.
  3. After the oats are softened, add the eggs and mix well.
  4. Stir in the brown sugar, the applesauce and melted butter.
  5. Add the sifted flours, powder, soda and salt along with the cinnamon and nutmeg, mix until well blended.
  6. Stir in the chopped apples.
  7. Line your muffin tins with paper liners and lightly spray the inside of them with non stick cooking spray to prevent the liners from sticking to the muffins.
  8. Fill the muffin liners about 3/4 full and sprinkle the tops with remaining oats.
  9. Bake for 16-18 minutes. Do not over bake.
  10. Remove from the oven and serve warm or room temperature with a glass of milk for breakfast or a snack.
  11. *To freeze: Prepare as usual, let cool completely and then store in a freezer friendly container or plastic bag.
  12. Makes 24 muffins.
