Pumpkin Cake with Chocolate Cream Cheese Frosting

I am officially completely into pumpkin at my house!  I personally don’t think that it’s a problem, but my husband has politely requested a little less pumpkin in our meals! That’s fine, because that means more pumpkin for the rest of us, right?!  This yummy Pumpkin Cake with Chocolate Cream Cheese Frosting was an exception to his request though, and made an appearance at our dinner table just in time to start the weekend!  Don’t think that this layer cake is time consuming either.  I whipped it up quickly during my daughter’s nap time and it was ready to go well before dinner was even started!

Pumpkin Cake Batter

Pumpkin is so great in baking because it always leaves you with that wonderful moist texture.  The bonus is that it’s so healthy for you too!  I know, I know, this cake is far from healthy, but it’s a nice thought. 🙂

Fresh From the Oven Pumpkin Spice Cake

I originally was going to bake this in one of my 9 x 13 cake/casserole dishes.  When I went into my cupboard to get one out, I remembered that they were being used in my freezer for my Stock Your Freezer Fridays Series.  No problem, I moved on to (2) 9 inch cake pans, which worked very well.  So if you don’t want to make this layered, that’s okay!

Frosting First Layer of Pumpkin Cake

This pumpkin spiced cake batter was smooth and baked really nicely.  I let the cakes cool and then was on to frosting them.

Chocolate Frosted Pumpkin Cake

I was going to just make a basic cream cheese frosting, but I was in the mood for chocolate.  Hmmm, when am I not?  With the cream cheese already softened and ready to go, adding some Special Dark Chocolate Cocoa powder was simple.  I didn’t cut the layers to make them perfect, I just frosted the first one, and pushed the second layer onto it and frosted that.  See, not fancy at all!

Chocolate Chips on Chocolate Pumpkin Cake

I used a spatula to spread the frosting because I love that simple, homemade look.  I sprinkled some mini chocolate chips I had onto the top to make it look pretty and for more chocolate of course.

Dessert Pumpkin Cake with Chocolate Frosting

My children were so excited about this cake!  I think they thought it was really special because it was layered and it looked a little fancy.  Me, I just loved it because I love Pumpkin and Chocolate together and I served mine less fancy and on it’s side so I could easily get the perfect bite with my fork!

Yummy Pumpkin Cake with Creamy Chocolate Cream Cheese Frosting

Needless to say, this yummy dessert will be made again sometime very soon!  I hope you have a chance to make it soon as well!

Pumpkin Cake with Chocolate Cream Cheese Frosting

Ingredients

  • For the cake:
  • 2 cups flour
  • 4 eggs, at room temperature
  • 1 cup canola oil
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (15 oz.) can of pumpkin puree
  • For the frosting:
  • 1/4 cup unsalted butter, softened
  • 1 (8 oz.) container cream cheese, softened
  • 1/3 cup Special Dark Chocolate cocoa powder
  • 1/4 cup heavy whipping cream
  • 2 cups confectioner's sugar

Instructions

  1. Preheat your oven to 350 degrees.
  2. Prepare a 9 x 13 pan or (2) 9 inch cake pans (line with parchment paper and spray for cake pans) by lightly spraying with non stick cooking spray.
  3. In your Kitchen Aid mixer, combine the sugars, eggs and oil well.
  4. Sift the flour,spices, baking powder, soda and salt.
  5. Mix the dry ingredients into the wet ingredients.
  6. Stir in the pumpkin.
  7. Pour the batter evenly into the pan.
  8. Bake for 30-35 minutes or until a tooth pick inserted into the cake comes out clean.
  9. Remove from the oven.
  10. Cool completely before frosting. If using cake pans, cool for 15 minutes in the pans and then carefully remove them and let them finish cooling on a cooling rack before frosting.
  11. For the frosting:
  12. In your Kitchen Aid Mixer, whip together the butter and cream cheese.
  13. When combined, slowly add the sugar and cocoa a little at a time on low-or you will have a mess.
  14. Slowly add the heavy cream.
  15. When all sugar and heavy cream is incorporated, whip everything together well until it is a creamy frosting like texture.
  16. Frost the cake.
  17. Enjoy!
