Blackberry & Peach Cobbler Baked Oatmeal

I hope everyone had a wonderful 4th of July!  My family and I made our way to a local parade in the morning, ate by the lake for lunch, and enjoyed some tasty burgers for dinner before watching some great fireworks in the evening.  The weather was actually a bit cooler than usual, which seemed to make for a less “buggy” night.  How did you spend your day?

Stir together the Baked Oatmeal Ingredients

On Saturday afternoons, I usually make breakfast ahead of time for Sunday mornings.  This allows me to spend a little extra time sipping my coffee and catching up with everyone on Sunday morning instead of spending a lot of time in the kitchen.  After popping breakfast into the oven, my work is done and we all get to take our time enjoying a tasty, weekend breakfast together.

Add the Blackberries & Peaches to the Oatmeal

I have had a bowl full of juicy peaches on my counter all week that I just haven’t gotten around to using.  Since the weather is a little cooler, I thought some sort of baked oatmeal would be the perfect dish for this Sunday’s breakfast!  This warm Blackberry & Peach Cobbler Baked Oatmeal is just bursting with fresh flavor and almost tastes like dessert!  The juicy peaches and plump fresh blackberries are baked with cinnamon, brown sugar and old fashioned oats to give you a simple, but yummy breakfast that everyone in your family will love.  This oatmeal will fill your whole house with the sweet aroma of fresh summer fruits and have everyone anxiously awaiting breakfast.

Mix the Blackberries & Peaches into the Oatmeal

I doubled this recipe because I wanted to have some for tomorrow, and I knew my children were going to want to eat this for lunch today when it came out of the oven.  This oatmeal is beautiful on the table for breakfast or brunch and can even be made ahead of time and stored in the freezer!  I have one small bowl of this left over and I think I might even top it with a little vanilla ice cream for dessert tonight:)

Warm Blackberry & Peach Cobbler Baked Oatmeal

Blackberry & Peach Cobbler Baked Oatmeal with Milk

Blackberry & Peach Cobbler Baked Oatmeal

Ingredients

  • 3 cups old fashioned oats
  • 3/4 cup brown sugar, packed
  • 1 cup milk
  • 2 eggs
  • 1/4 cup butter, melted and cooled
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. pure vanilla extract
  • 1 tsp. salt
  • 1 cup fresh blackberries
  • 2 large ripe peaches, peeled and sliced

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, mix together the oats, brown sugar, cinnamon, baking powder, and salt.
  3. Beat in milk, eggs, melted butter, and vanilla extract.
  4. Carefully fold in the blackberries and peaches.
  5. Spread into a lightly greased 8 x 8 inch baking dish, pie plate or 2 qt. casserole dish.
  6. Bake for 35 - 40 minutes or until the middle is set.
  7. Serve warm with milk for breakfast.
  8. * To Freeze, prepare as usual, but do not bake and cover and store in the freezer in a freezer friendly container.
  9. To defrost, place in the refrigerator overnight and bake as usual in the morning. It may require 5- 10 more minutes of baking time.
  10. Serves 4-6.
