Orange Cranberry Scones

These scones have a wonderful flavor and are a great addition to a weekend brunch.  Perfect on a cold morning with a cup of hot coffee or tea.  If you have any left over these also freeze beautifully.

Orange Cranberry Scones

Ingredients

  • 2 cups flour
  • 5 1/2 Tbsp. butter, cold
  • 1/3 cup orange juice
  • 1/4 cup heavy cream
  • 1 egg
  • 1 Tbsp. orange zest
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 6 oz. bag dried cranberries
  • 7 tsp. sugar
  • For The Glaze
  • 1/2 cup confectioners sugar
  • 1/2 tsp. pure vanilla extract
  • 1 Tbsp. orange juice

Instructions

  1. Pre heat oven to 400 degrees.
  2. In a large bowl or mixer, stir together flour, sugar, baking powder, baking soda, salt and orange zest.
  3. Cut cold butter into squares and mix or use a pastry blender until the mix looks like coarse crumbs.
  4. In a smaller bowl, combine the cranberries,orange juice, egg and heavy cream.
  5. Add that mixture to the flour mixture and mix until blended together.
  6. Do not over mix.
  7. On a well floured surface, gently knead the dough 8 times.
  8. Roll the dough into a 1 inch thickness and about a 8 inch circle.
  9. Cut into 8 pieces.
  10. Separate the wedges and place on a parchment lined or silicone lined cookie sheet.
  11. Brush with milk and sprinkle with sugar.
  12. Bake for 12 minutes or until lightly browned.
  13. Remove from cookie sheet to a cooling rack and cool completely.
  14. Whisk glaze together in a small bowl and pour into a small plastic bag.
  15. Snip the end of the bag and drizzle the glaze over the scones.
