Pepper Jack Biscuit Muffins

I know I can’t be the only one out there who has been dealing with this cold winter by making warm, big one pot meals for dinner.  It seems like that’s all I have been making lately because it makes my house feel warm and cozy while the meal cooks on top of the stove all day and then comforts me in the evening when I sit down with my family to eat.  My favorite warm wool socks have taken quite a beating this season too.  Some days it seems like I just can’t warm up or get rid of that chill!

If you’ve got soup or chili on your menu this week, then you have got to try these tasty Pepper Jack Biscuit Muffins!

Today’s frigid temperatures have got me cooking up another big pot of hearty chili.  After I got my chili going this afternoon, I thought I would make some type of bread to go along with it.  A fresh loaf of french bread from the bakery section in the grocery store would have been just fine, but I didn’t feel like going anywhere in this cold.  As I looked through my cupboards and refrigerator for ingredients, I came across a block of Pepper Jack cheese.  So I decided I would make some type of cheesy bread!  Yum!

These cheesy “biscuit muffins” turned out sooo darn good!  Usually when I am photographing my food, I take a few nibbles after I am finished.  Well, not today folks.  When I broke this apart to share with everyone how cheesy and moist these were, I just had to eat one.  After one half, I said what the heck- and ate the other half too.  I guess that counts as my afternoon snack 🙂

You won’t believe how easy these delicious things are to make!  In under a half an hour these Pepper Jack Biscuit Muffins can be prepared, baked and be on your table for dinner with your family’s favorite meal.  These almost melt in your mouth when they are eaten warm from the oven, and go well with a variety of different foods.  If you didn’t want to serve these with dinner, they would also be wonderful for breakfast in the morning along with some scrambled eggs and fresh fruit.

However and whenever you decide to serve these, I think you and your family will just love them!

Pepper Jack Biscuit Muffins

Ingredients

  • 4 Tbsp. unsalted butter, melted and cooled
  • 1 cup buttermilk
  • 1 egg
  • 1 3/4 cups all purpose flour
  • 1 tsp. chili powder
  • 1 1/4 tsp. baking powder
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 1/2 cups freshly grated Pepper Jack cheese

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line your muffin pan with paper liners.
  3. In your Kitchen Aid Mixer, combine the buttermilk, the cooled butter and egg and mix together well.
  4. Add in the chili powder, baking powder, salt, sugar, and flour and mix until just combined.
  5. Stir in the Pepper Jack Cheese just until combined.
  6. The batter will be lumpy and like a biscuit.
  7. Evenly scoop the batter into your muffin lined pan, filling about 3/4 full.
  8. Bake for 20 minutes or until a toothpick inserted into one of the "biscuit muffins" comes out clean.
  9. Serve warm or at room temperature with chili, soup, or eggs.
  10. Makes about 12.

    That is the most beautiful muffin tin I’ve ever seen. I’d be hanging that on the wall – not using it. These sound awesome. Love Pepper Jack Cheese.

      Thank you Linda! It was the first time I used that muffin pan and it’s ceramic so I was a little afraid, but it worked out great and it was nice to add it into the picture:) It would be pretty on the wall too, I hadn’t thought of that!

      Thanks Gloria! I just love Pepper Jack cheese too! These are the easiest biscuit/muffin type bread I have ever made. Not fancy- but really tasty!
