Eggs In a Hole with Hearts

January 16, 2013 by Shannon

With Valentine’s Day about a month away,  I am coming up with sweet little ways to show my kids I love them and make them feel special.   I make Eggs In a Hole on a regular basis for a quick, filling breakfast and serve them with fresh fruit and orange juice.   I think it is fun for different holidays and seasons to customize these:)  I just use simple cookie cutters to cut out these shapes and the possibilities are endless.  I love to see my children smile when I bring these to the table.

Use a cookie cutter and cut out the shape you want and set the shape aside.

Butter the top of the bread and in a cast iron skillet melt butter and add the bread without the cut out buttered side up.

Crack the eggs into the hole.  Season with salt & pepper.  I take a butter knife and slit the middle of the yolk so it cooks a little more.

When they are just about set, remove to plate and add the cut outs to toast.

Serve with fresh fruit and juice.  Enjoy!
