Simple Pumpkin Bread {Be Carton Smart This Holiday Season With Tetra Pak}

The holiday season is a special time of year.  It may be the only time you get together with extended family or close relatives that live away from home.  This year, enjoy your family and delicious holiday meals while making a difference and being Carton Smart by preparing your special dishes with food products packaged in Tetra Pak cartons.  Some of your favorite high quality and organic brands are now packaged in Tetra Pak cartons and can be used in your favorite casseroles, side dishes, soups and desserts.

I love having a neat and orderly kitchen, especially during the holiday season.  You tend to buy more food because you are preparing large meals, and food packaged in Tetra Pak cartons allows you to stock your pantry or cupboard efficiently, even in small spaces.  This allows me to spend more time with family and less time trying to find a place for everything.

Pumpkin Puree is a staple in my pantry for Thanksgiving and Christmas meals.  My family loves my Simple Pumpkin Bread.  It’s great while they are waiting for the turkey or ham to come out of the oven, with dinner, or even for a simple breakfast with a cup of coffee when you have out of town guests.

Simple Pumpkin Bread

Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 3/4 cup canola oil
  • 3/4 cup applesauce
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1 tsp. salt
  • 1 (16 oz.) carton Pacific Foods Organic Pumpkin Puree

Instructions

  1. Pre heat the oven to 375 degrees.
  2. In a large mixing bowl, beat eggs, sugar, pumpkin, applesauce and oil until smooth.
  3. Add in dry ingredients and mix well.
  4. Spray 2 small loaf pans with cooking spray.
  5. Fill the pans evenly with the batter.
  6. Bake for 30-35 minutes or until a tooth pick inserted into the center of the bread comes out clean.
  7. Makes 2 small loaves.
  8. * If you are freezing these, cool completely and store in a plastic freezer bag or container.

    I love saving space anywhere in my kitchen:) Hmm, it’s too bad you can’t find them as easily as you use to. Online shopping seems to be how I shop for these types of things because we live in a small town and it’s hard to find things sometimes. Have a great weekend Glynis:)

    I love using the Tetra Paks and enjoy having them in my pantry. I always look for them in the store, but I do have to say that we had more of them when we lived in Canada. but I do buy them when I have the opportunity.
