Chewy Peanut Butter Chocolate Chip Oatmeal Cookies

This week’s recipes are going to be pretty simple.  My family had a garage sale this weekend and I am still trying to get back on schedule.  Unfortunately, the laundry and house cleaning chores didn’t stop just because I had other things to do on Saturday, although that would have been nice wouldn’t it?  Sometimes I need to remind myself that things don’t always need to be perfect and it’s okay to make a semi homemade dinner, or even order out once in a while.  As mother’s I think we easily feel guilty if we don’t make the best meals, or have the most creative ideas with our children.  This week I am not going to stress about how unorganized things may be because I was thrown off of my schedule, instead I am going to have fun with my children and slowly catch up.  Good thing I have some quick, homemade desserts up my sleeve for those days when we are all craving a little something sweet!

I seem to be stuck on peanut butter and chocolate flavors lately, so I decided to make some chewy cookies that included those ingredients.  I like simple peanut butter cookie recipes, but sometimes I am in the mood for something with a little more flavor- and chocolate!  While a crisp peanut butter cookie is a nice treat, peanut butter and chocolate blended together always makes me happy and satisfies my sweet tooth.  These Chewy Peanut Butter Chocolate Chip Oatmeal Cookies are great for dessert, a snack or even a nice treat for a family friend.  These can also be frozen, which is nice because the children love these as an after school snack.  I must admit that I have been known to even pair one these chewy cookies with my morning coffee for a sweet start to the day:)  What’s your family’s favorite homemade cookie?

Chewy Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup shortening
  • 1/2 cup chunky peanut butter
  • 1/2 cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 3/4 cup all purpose flour
  • 2 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 cups old fashioned oats
  • 1 cup semi sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. In your Kitchen Aid mixer, beat the butter, shortening, and peanut butters until fluffy.
  3. Add the vanilla and eggs and beat until combined.
  4. Sift together the dry ingredients except for the old fashioned oats, and slowly add them to the mixture and stir together until just combined.
  5. Add the old fashioned oats and mix.
  6. Stir in the chocolate chips.
  7. Line your baking sheets with parchment paper.
  8. With a large spoon, take about 1/3 cup scoops, roll lightly into a ball with your hands and gently flatten between your hands, then place on the cookie sheets.
  9. Bake for 13 to 15 minutes or until edges are slightly browned, but still soft in the middle.
  10. Remove from the oven and let rest 3 minutes on the cookie sheet.
  11. Gently remove with a spatula to a cooling rack to cool completely.
  12. Makes about 20 large cookies.
  13. * To freeze, cool completely and store in an airtight container.

    I love peanut butter cookies, chocolate chip cookies, and oatmeal cookies. I never thought of putting all three together. This sounds/looks a wonderful combo!
