Sweet BBQ Meatloaf

I hope everyone had a wonderful weekend!  My family spent most of the weekend planting our vegetable garden and I am looking forward to working out in the garden a lot this summer.  Spending most of the day outdoors gardening is wonderful, but at the end of the day I still like to have a nice, home cooked meal on the table for my family.   This comforting, Sweet BBQ Meatloaf is simple to throw together and put in the oven while you are cleaning up for dinner.   This recipe also makes enough meatloaf so that you can enjoy a yummy meatloaf sandwich the next day.  If I know I am going to have a busy day and I have a little extra time in the morning, I will prepare the meatloaf, place it in the baking dish, cover it and place it in the refrigerator until it’s dinner time.  I love it when the prep work is already done:)  Serve this with a fresh salad and baked potato for a well rounded meal.  What are some of your favorite, simple summer dinner recipes?

Sweet BBQ Meatloaf

Ingredients

  • FOR THE MEATLOAF:
  • 2 1/4- 2 1/2 lbs. 90 % lean ground beef
  • 2 cups old fashioned oats
  • 1 1/2 cups milk
  • 2 eggs, lightly beaten
  • 1/2 small onion, chopped fine
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper
  • FOR THE SAUCE:
  • 1 cup ketchup
  • 1/2 tsp. liquid smoke (optional)
  • 1 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a large mixing bowl combine all ingredients for the meatloaf with your hands.
  3. In a 9 x 13 baking dish, form the meatloaf.
  4. In a small saucepan, combine the sauce ingredients and heat.
  5. Set aside.
  6. Bake the meatloaf for 20 minutes, then cover with half of the sauce and continue cooking.
  7. Bake for an additional 35-45 minutes or until a meat thermometer inserted into the loaf reads that it is done.
  8. Remove from the oven, cover with the rest of the sauce, slice and serve hot.
  9. Serves 6-8.

    I love making BBQ meatloaf! Your’s looks great and you got a pretty good photo of it! Last time I made meatloaf and took pics, they turned out pretty bad. It seems like some things rarely can get a good shot taken of them but you did good!
