Overnight Banana Bread Baked Oatmeal

I am always trying to come up with new recipes for those ripe bananas on my counter.  I always have bananas in my kitchen because I have 4 growing monkeys running around who are always looking for a snack.  I usually buy 3 or 4 bunches of bananas each time I go to the store and sometimes I think people are wondering what I am stocking up for:)

I was going to use some of those bananas to make banana bread yesterday, but I just wasn’t in the mood for it.  A cold front moved into our area a few days ago and it’s been really cold!  So cold, that the last few mornings there have been flurries in the air.  Yuck!  I looked down at the warm flannel shirt I was wearing and decided to make this oatmeal and just bake it in the morning for a delicious, warm breakfast.  It was the perfect start to a chilly morning.  The best part was that I did all the work the night before.  This actually isn’t hard to make, but I enjoy not cleaning up a big mess first thing in the morning.  This really tastes like banana bread and of course, there were no left overs!  This recipe also freezes beautifully and can be doubled so you can bake one the next morning and freeze one for a different day.

Overnight Banana Bread Baked Oatmeal

Ingredients

  • 2 large bananas, mashed
  • 3 cups old fashioned oats
  • 3/4 cup brown sugar
  • 1/2 cup chopped walnuts
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 1/4 cup butter, melted and cooled
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. pure vanilla extract
  • 1 tsp. salt

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix together all of the ingredients.
  3. Spread into a 8 x 8 inch baking dish or deep dish pie plate.
  4. Bake for 30 minutes or until the center looks set.
  5. Serves 6.
  6. *If you are freezing this- prepare as usual and freeze unbaked. When you are ready to use the frozen oatmeal, defrost in the refrigerator overnight and bake as usual!

    Shannon…can you say winner!! My very picky DD loved this!! I used an almond/coconut blend milk by Blue Diamond and it was perfect. I can’t wait to try the others…Thanks bunches!!

      Thanks Joy! You are welcome! 🙂 After I made a few different flavors of the baked oatmeal, my family was hooked so I continues coming up with different combinations because oatmeal is such a great breakfast and start to the day!

I think that the non dairy milk would work just fine:) This Banana Bread Oatmeal is one of our absolute favorites and I make it all of the time because we always have bananas!
