Pineapple Coconut Muffins

I just love Pineapple & Coconut!  It’s just so tropical you know?  Over the weekend I decided to try making muffins with pineapple and coconut and they turned out great!  The crushed pineapple makes these muffins so moist and flavorful.  I think you can even use this recipe to make a cake or cupcakes with a light whipped topping.  Either way, these were a nice treat on the first day of Daylight Savings Time when I needed a little pick me up:)  Did you bake anything special this past weekend?

Pineapple Coconut Muffins

Ingredients

  • 1/2 cup extra virgin coconut oil, melted and cooled
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 2 1/2 tsp. baking powder
  • 1/2 cup sweetened coconut
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 (20 oz.) can crushed pineapple with juice

Instructions

  1. Preheat your oven to 350 degrees.
  2. In your Kitchen Aid Mixer, combine the coconut oil and sugar until well combined.
  3. Add the eggs and the vanilla and beat well.
  4. Add the dry ingredients and mix together.
  5. When they are well blended, fold in the can of crushed pineapple and mix until just combined.
  6. Line 18-24 muffin tins with paper liners and fill the cups 2/3 full.
  7. Bake the muffins for 20-25 minutes or until wooden toothpick comes out clean.

    These look delicious, Shannon! Growing up my mom loved pineapple so she used it a lot for baking but I don’t think she ever made muffins ~ I’m going to have to give these a try.
