Double Chocolate Pistachio Cookies

I love Pistachios!  But they are even better when they are in a chocolate cookie with white chocolate chips!  I wanted to make cookies earlier this week, but my children were off from school and well, it just didn’t happen.  Last night after they went to bed I decided that there was no better time.  The house was quiet and I had the kitchen all to myself.  I turned on some music and baked.  It was so relaxing and after my little baking session my husband and I enjoyed some warm cookies fresh from the oven.  What a perfect evening right?  If you are in search of a different cookie recipe- give these yummy cookies a try!

Double Chocolate Pistachio Cookies

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2/3 cup good unsweetened cocoa
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 12 oz. bag white chocolate chips
  • 1 cup pistachios, coarsely chopped

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Cream the butter and both sugars until light and fluffy in a Kitchen Aid mixer.
  3. Add the vanilla, then the eggs, 1 at a time, and mix well.
  4. Add the cocoa and mix again.
  5. Sift together the flour, baking soda, and salt and add to the chocolate with the mixer on low speed until just combined.
  6. Fold in the chopped white chocolate.
  7. Then fold in the pistachios.
  8. Drop the dough with a large spoon on a baking sheet lined with parchment paper.
  9. Dampen your hands and flatten the dough slightly.
  10. Bake for exactly 15 minutes (the cookies will seem underdone).
  11. Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.
